Lima Beans (Butter Beans) Curry

I feel Butter Beans is an apt name for Lima Beans.  Fresh green Lima Beans take less time to cook.

Ingredients:
Lima Beans - 1 cup
Onion - 1 big
Tomatoes - 1 big
Cilantro/Coriander leaves
Cardamom/Elaichi - 2
Cloves/Long - 4
Bay leaf - 1
Grated ginger - 1 tsp
Grated garlic - 1tsp
Salt
Oil - 3 tbsp
Red chilli powder - 4 tsp
Garam Masala - optional
Turmeric - a pinch

Method:
1. Cook the Lima Beans with 2 cups water till soft.
2. Heat the oil in a kadhai/wok and add Bay leaf, cardamom, cloves.
3. After a min, add finely chopped onions, grated ginger, garlic and stir fry.
4. Fry onions till golden brown and then add chopped tomatoes.
5. Stir fry till tomatoes are mashed and oil separates. 
6. To this add cooked lima beans, salt, red chilli powder, garam masala, turmeric and chopped cliantro.
7. Cook for 5 min covering with a lid.
8. Turn off the heat and Lima Beans Curry is ready to serve.

  2. this recipe is somewhat different one..but good curry for chapathi too..butter beans with spices sounds good..
