Bottle Gourd Kheer

Ingredients:
Bottle Gourd - about 500 gms
Ghee/Clarified Butter - 1 tbsp
Milk - 2 cups
Brown Sugar or Sugar - 1/4 cup
Cashews, Pistachios, Almonds - 4 each
Cardamom/Elaichi - 2 pods

Method:
1. Peel the bottle gourd skin, discard the seeds and grate the bottle gourd.
2. Heat a pan/skillet and add about 1 tbsp ghee.  Add the grated bottle gourd and saute for 5 - 7 minutes at low flame.
3. Add milk, cashews, almonds, pistachios and continue cooking till bottle gourd turns soft.  Add more milk if required.  Add brown sugar, ground cardamom and cook till you get the desired consistency.
4. Garnish with nuts and serve.  Refrigerate for an hour if you like cold desserts.
