Vada Pav / Vegan Potato Burger

Vada Pav
Indian Vegan or Vegetarian Burger made with potatoes. An extremely popular fast food of Mumbai.

Ingredients:
Boiled Potatoes - 3 big
Green Chillies - 4
Cilantro/Coriander Leaves - 1/2 cup
Garlic - 4 big cloves
Ginger - 1/4 inch piece
Cumin/Jeera Seeds - 1 tsp
Turmeric/Haldi - 1/2 tsp
Gram Flour/Chickpea Flour/Besan - 1/2 cup
Rice Flour - 2 tbsp
Cayenne Pepper/Red Chilli Powder - 1 tsp
Black Pepper Powder/Kali Miri - 1/4 tsp
Whole Wheat Buns or Pav
Salt
Oil

How to make Mumbai Vada Pav:
  • Finely chop cilantro and green chilies. Grate (or finely chop)ginger and garlic. 
  • In a mixing bowl, add mashed boiled potatoes, chopped chillies, cilantro, ginger, garlic, cumin, 1/4 tsp turmeric and salt. Mix all the ingredients well. Make round balls of this potato mix and slightly flatten them like a pattice.
  • Batter: Add gram flour, rice flour, cayenne pepper, black pepper powder, 1/4 tsp turmeric, little salt in a bowl. Add water in small amounts to form a thick batter.
Mumbai Vada Pav
  • Heat enough oil for deep frying. Dip one potato ball in the batter and deep fry till golden brown. Check if the batter is thick enough to coat the potato vadas well. Repeat the same for other potato balls.
  • Apply dry Garlic Chutney for one half of the bun. Place a fried vada with some chopped raw onions or a round slice. Place the other half of the bun and enjoy.  Top it with some more green chilies.
