Gujarati Dabeli

A spicy and tangy potato sandwich now well known as Indian Street Food.  I had posted a No Onion Garlic Recipe of Dabeli earlier. 

Ingredients:
Boiled Potatoes - 2 big
Onion - 1 medium
Tomato - 1 medium
Coriander/Cilantro Leaves - few sprigs
Dabeli Masala - 1 1/2 tbsp
Tomato Ketchup - 1 tbsp
Ginger Garlic Paste - 1 tbsp
Black Pepper Powder - 1/4 tsp
Cayenne Pepper/Red Chilli Powder - 1/2 tsp
Pav or Buns or Dinner Rolls
Salt
Oil

Peanuts/Groundnuts  - about 2 tbsp
Pomegranate Seeds/Dalimb/Anardana - about 2 tbsp
Chopped Raw Onions - about 2 tbsp

How to prepare Dabeli:
1. Finely chop onions., tomatoes and cilantro.  Peel and grate the boiled potatoes.
2. Heat about 2 tsp oil in a pan.  Add ginger garlic paste and saute for a minute.  Add onions, salt and black pepper powder.  Saute till onions turn soft.  Add tomatoes and cook till tomatoes are mashed.
3. Now add dabeli masala, cayenne pepper and tomato ketchup.  Saute for a minute and add potatoes.  Add about 2 tbsp water and mix all the ingredients well.  Taste for salt and cook till the mix turns dry.  Turn off the heat and add chopped cilantro.  Let this mix cool.
4. Roast peanuts with few drops of oil till the skin comes off and turn slightly darker.  Discard the peanut skin.  Sprinkle a pinch of black pepper powder and a pinch of cayenne pepper on the roasted peanuts.  Mix well and masala peanuts are ready.  Along with peanuts, you can add cashews/kaju if you like.
5. Stuff a part of the potato mix between two slices of the buns.  Top it with masala peanuts, pomegranate seeds and raw onions.  Roast these stuffed buns with little butter or oil, roasting is optional.  Enjoy tangy, fruity, crunchy Dabeli.  You can serve Dabelis with sweet sour Tamarind Chutney and spicy Pudina Chutney if you like.
