Vegetable Frankie
Every Indian city is well known for its unique street food. So far, you have read all about Mumbai and Mangalore delicacies. How about Kolkata's delicious Kati Roll! This loved street food of Kolkata is well known all over India as Vegetable Frankie. You can make these wraps in a number of ways .... with vegetables, with paneer (Indian Cottage Cheese) or meat as well. Today I made these rolls with everyone's favorite potatoes and lots of colorful vegetables.

Ingredients:
Boiled Potatoes - 2 big
Green Peas/Matar - 3/4 cup
Grated Carrots - 1/2 cup
Coriander/Cilantro Leaves - few sprigs
Grated Ginger/Adrak - 1 tsp
Grated Garlic/Lahsun - 1 tsp
Green Chili Paste - 1 tsp
Fennel Seeds/Saunf - 1 tsp
White Sesame Seeds/Til - 1 tsp
Chat Masala - 1 tsp
Garam Masala - 1/2 tsp
Salt
Oil

Green Coriander Mint Chutney (hot)
Dates Tamarind Chutney (sweet)
Whole Wheat Tortillas/Roti
Shredded Cabbage/Pata Gobi - 1 cup
Bell Peppers/Capsicum (julienne sliced) - 1/2 cup
Raw Mango (julienne sliced) - 1/2 cup
Chat Masala - 1/4 tsp
Black Pepper Powder - 1/4 tsp
Salt

How to make Aloo Frankie / Kathi Roll:
  • In a microwave safe bowl, add green peas and grated carrots. Microwave for a minute. Add ginger, garlic, green chili and salt. Microwave for another 2 minutes. Make sure all moisture is gone. If not, microwave for another minute or so. Let it cool down.
  • Now add mashed boiled potatoes, chopped cilantro, 1 tsp chat masala, garam masala, sesame seeds and fennel seeds. Mix well and taste for seasonings. Divide this potato mix in 5 parts and make a log of each one.
  • Heat a pan for shallow frying. Add about 1 tbsp oil and fry the potato logs/cutlets until golden brown on all sides. Drizzle more oil as required.  Alternatively, you can deep fry these potato logs as well.
  • In a mixing bowl, add the raw vegetables - thinly sliced cabbage, bell peppers, mango slices, 1/4 tsp chat masala, fresh ground black pepper and little salt. Toss them well. You can add julienne sliced red onions as well.  Instead of cabbage, you can use lettuce as well.
Kathi Roll
  • Now build the vegetable Frankie the way you like. In the center of the whole wheat roti or tortilla, spread 1 tsp each of green chutney and tamarind chutney. Chutneys are optional. Add the raw vegetables followed by the shallow fried potato cutlets. Tie it up with toothpicks. For each Frankie, use 4 toothpicks and make 2 crosses, so that the stuffing holds well while frying.
  • Heat a pan and drizzle 1 tsp oil or ghee/clarified butter. Roast the stuffed Frankie roll on both sides. Remove the tooth picks and serve Veg Frankie as it is or with tomato ketchup.
