Cucumber Salad
Summer is here and so is the time to hydrate ourselves. As such, cucumbers are a part of our diet throughout the year, but its especially beneficial around this time of the year. One of the ways we love to relish this high water content vegetable is this simple refreshing salad. Its quite easy to put together, both in terms of time and ingredients.

Ingredients:
English Cucumber - 1 big
Roma Tomato - 1 medium
Red Onion - 1 small
Lime Juice - 2 tbsp
Olive Oil - 1 tbsp
Black Pepper Powder - 1/2 tsp
Cilantro/Coriander Leaves - 1 tbsp
Mint/Pudina Leaves - 5
Salt

How to make Tangy Cucumber Salad:
  • Peel the cucumber and thinly slice it. Thinly slice the tomato and onion as well.  Finely chop cilantro and mint.
  • In a mixing bowl, add olive oil, lime juice, cilantro, mint, fresh ground black pepper and salt. Mix well. Add sliced cucumbers, tomatoes and onions.  Toss them well. Let the salad rest for 5 - 10 minutes. Check for seasonings and add more lime juice if required.
  • For a little heat, you can add finely chopped jalapeno pepper or chili flakes too. Instead of roma tomatoes, you can add cherry tomatoes as well. I have used my favorite herbs, cilantro and mint. You can add chopped parsley as well. Instead of lime juice, you can add orange juice as well.
Serve Mint Cucumber Salad as a side dish with meals.
