Gajar or Carrot Burfi

Gajar ka Halwa is undoubtedly the most loved dessert in Bollywood movies.  Gajar or Carrot Burfi is another version of Halwa.

Ingredients:
Baby Carrots/Gajar - 3 cups
Whole Milk - 2 cups
Light Brown Sugar or Sugar - 2 1/2 tbsp
Green Cardamom/Elaichi - 2 pods
Pistachios/Pista - 5
Almonds/Badam - 2
Ghee/Clarified butter - 2 tsp

Method:
1. Grate the carrots.  If you are using regular big carrots, peel the outer layer and grate.  Grind the pistachios to a coarse powder and cardamom to a fine powder.  Slice the almonds.
2. Heat ghee in a thick bottomed vessel and add grated carrot.  Fry for about 5 minutes.
3. Add milk to the fried carrots and cook till milk evaporates.  Keep stirring.  Add ground pistachios, cardamom powder, sugar and continue stirring.
4. Continue cooking at low flame till moisture is lost completely and a lump is formed.  Turn off the heat.
5. Grease a tray/plate with few drops of ghee and spread the cooked mixture evenly.  Spread almond slices all over and let it cool to room temperature. 
6. Refrigerate for about an hour and cut squares.  Enjoy Carrot Halwa in the form of Barfi.

    Linda, kids will definitely like this. Studies suggest cooked carrots provide more nutrients than raw ones.

  13. बर्फी के तो हम भी बड़े दीवाने हैं, और ऊपर से ये बर्फी तो लाजवाब दिख रही है..
    उमा जी, ये बात ठीक नहीं..हर दिन आपके ब्लॉग पे इतने स्वादिस्ट पकवानों को देखता हूँ , मेरे तो मुँह में पानी आ जाता है.अब बताइए मैं बंगलोर में रहता हूँ..घरवाले भी नहीं साथ में की बना के खिला सके ये सब मिठाई,पकवान..तो हम बेचारे लोग क्या करें...बस हम तो बर्फी को देखे जा रहे हैं..... :D :P
    और वैसे,सोचता हूँ की आपके ब्लॉग के सारे recipe को मैं एक जगह अच्छे से लिख लूँ...काम आते रहेगा :)
