Sweet potato fritters are a sweet change from the regular onion and potato pakodas. I used corn meal and rice flour. Even Besan/Gram flour/Chick pea flour for these fritters tastes good. In Konkani, these fritters are known as Kananga Bhaji/Phodi.
Ingredients:
Sweet Potato - 1 mediumRice Flour - 1/4 cup
Yellow Corn Meal - 1/4 cup
Cayenne Pepper/Red chilli powder - 1 tbsp
Salt - about 1/2 tsp
Oil
Method:
1. Peel the sweet potato skin and cut it into thin slices.
2. Mix rice flour, corn meal, cayenne pepper, salt with water. Mix the batter well to avoid lumps. Batter must not be too thick or too watery.
3. Dip the sweet potato slices in the batter and deep fry in hot oil on a high flame. Fry till the slices turn crisp or the frying sound stops, the bubbling ceases.
