What do you like to eat when you are cooking for yourself? I go for something simple and effortless. In other words, a lazy meal. Today, my solitary treat was a semi homemade Vegetable Sandwich and some Veggie Chips.
Ingredients:
Sliced Bread or Baguette
Lettuce
Bell Peppers
Olives
Onions
Cucumbers
Pickled Cucumbers
Pickled Jalapeno Peppers
Tomatoes
Chipotle Ranch

How I made a Veggie Sandwich:
- Julienne slice onions, bell peppers. Cut cucumbers and olives into round slices. I used black and green olives. I skipped chopping lettuce and used whole iceberg lettuce leaves instead.
- Preheat the oven at 400 degrees F. Slice the baguette in the centre and place it on a baking tray. Apply butter or ghee (clarified butter) too, if you like. Or your favorite cheese. I skipped both butter and cheese.
- If you like wraps, use Whole Wheat Tortillas instead of bread. And for some proteins, you can use any beans as well. Corn would be an excellent topping too.
- Heat the bread for about 2 - 3 minutes or until the bread is toasted. Alternately, you can heat the bread in a pan on a stove top as well. Top the bread with lettuce leaves and other veggies of your choice. And now pick the dressing - Ranch, Blue Cheese, Balsamic Vinaigrette, Honey Mustard. Honey mustard is sweet for my taste and my favorite is Chipotle Ranch.
Enjoy Vegetable Sandwich with chips, fries, onion rings. I love mine with veggie chips.
