Eggless Oats and Wheat Cookies

Ingredients: Wheat Flour - 1 1/2 cups Whole Oats - 1 1/4 cups Brown Sugar - 1 cup Unsalted Butter - 1/2 pound Walnuts/Akrot - 1/2 cup Whole Pistachios or Almonds or Cashews Baking Soda - 1/4 tsp Baking Powder - 1/8 tsp Green Cardamom/Elaichi - 2 pods (seeds only) Method: 1. Roughly chop the walnuts.  Grind green cardamom seeds to a fine powder. 2. Microwave butter in a microwave safe mixing bowl for about 2 minutes to melt the butter.  Alternately, you can heat butter in a vessel on a stove top.  Let the butter cool slightly, about lukewarm. 3. Now add chopped walnuts, green cardamom powder and brown sugar to the melted butter.  Mix well with a spoon to dissolve the sugar. 4. Lastly add baking soda, baking powder, wheat flour and oats.  Mix all the ingredients well.  5. Divide the dough into equal size 20 - 25 round balls.  Slightly flatten them and place whole pistachios in the centre.  The dough has enough butter, so ...

Eggless Chocolate Cookies

Ingredients: All Purpose Flour - 1 1/4 cups Melted Butter - 1/2 cup Milk Chocolate Chips - 1/2 cup Brown Sugar - 1/3 cup Milk - 1/4 cup Almonds/Badam - about 10 Baking Soda - 1/8 tsp Baking Powder - 1/8 tsp Cinnamon Powder - 1/4 tsp Method: 1. Melt the butter.  Roughly chop the almonds. 2. In a mixing bowl, add melted butter, chocolate chips, chopped almonds, baking soda, baking powder, cinnamon powder, brown sugar.  Mix well. 3. Add all purpose flour and milk.  Mix all the ingredients well.  Divide the dough into 10 - 12 round balls.  Slightly flatten them  4. Preheat the oven at 350 deg. F for about 10 minutes.  Bake the cookies at 350 deg. F for 12 - 15 minutes.  Let the cookies cool for about 5 minutes.

Eggless Whole Wheat Coconut Cookies

A healthier alternative to all purpose flour is whole wheat flour.  Here is my recipe for crunchy healthy coconut cookies. Ingredients: Whole Wheat Flour - about 2 1/4 cup Dessicated (Dry) Coconut - 1/2 cup Walnuts/Akrot - 1/4 cup (optional) Unsalted Butter - 1/2 pound Light Brown Sugar - about 1 cup Green Cardamom/Elaichi - 2 pods Baking Soda - 1/8 tsp Baking Powder - 1/4 tsp Whole Pistachios or any other nuts Method: 1. Microwave butter for about 2 minutes to melt it.  Alternately, you can heat butter in a pan on a stove top, just enough to melt it.  Let the melted butter cool slightly.  Grind the cardamom seeds to a fine powder.  Roughly chop walnuts. 2. In a mixing bowl, add melted butter, sugar, dessicated coconut, chopped walnuts and cardamom powder.  Mix all the ingredients well with a fork or spoon. 3. Eggless Cashew Butter Cookies

Eggless cookies with loads of cashews and a butter delight. Ingredients: All Purpose Flour/Maida - 2 cups Unsalted Butter - 1/2 pound  Light Brown Sugar - 1 cup Chopped Cashews - about 1/2 cup Baking Soda - 1/8 tsp Baking Powder - 1/8 tsp Green Cardamom/Elaichi - 4 pods (seeds only) Method: 1. Heat butter just enough to melt it.  Let it cool.  Grind cardamom seeds to a fine powder. Dice cashews into small pieces. 2. In a mixing bowl, add butter and brown sugar.  Mix well with a fork or spoon.  Add cashew pieces, cardamom powder and mix well.  Lastly, add all purpose flour, baking powder and baking soda.  Mix all the ingredients to form a soft dough.  Divide the dough into 20 - 25 round balls.  You can use cinnamon (dalchini) or nutmeg (jaiphal) instead of cardamom. 3.
