Onion Carrot Uttappa

Uttappa or Uttappam is a South Indian gluten free savory pancake made of lentils and rice. Like an Italian pizza, it can be topped with multiple veggies - onions, tomatoes, green chilies, cilantro. Onions and carrots are my favorite toppings for this delicious pancake. Nowadays, cheese is also added as a topping.

Ingredients:
Idli Rice or Medium Grain Rice - 1 cup
Urad dal/Split Black Gram - 1/3 cup
Methi/Fenugreek seeds - 1/4 tsp
Cilantro/Coriander Leaves
Green Chilies (optional)
Onions
Carrots
Salt
Oil

How to cook South Indian Uttappam:
  • Soak rice and urad dal separately for 4 - 5 hours. Soak Methi seeds with rice.
  • Wash rice and urad dal. Grind urad dal to a very fine paste and rice slightly coarse, like semolina. Mix ground rice, ground urad dal, salt and ferment it overnight. The batter consistency is thinner than idli batter. The batter will rise almost to its double after fermentation.
  • Finely chop onions, green chilies, cilantro and carrots. Feel free to add your favorite veggies like capscium/bell peppers, beetroot, spring onions and so on.
  • Heat a pan and spread a ladle full of batter forming a circular shape. Add chopped vegetables all over the dosa and drizzle oil. Flip the dosa after a minute or two. Roast both sides well.
Serve hot Uttappa with coconut chutney and/or sambhar.

  2. I like this dish very much but can I use my dosa batter to make this??I think ratio of rice to urad dhal for dosa mix is different to what you have given here.
    About pumpkin crisps.just dry enough so that crisps aren't wet and so they dont splutter when dropped in hot oil.

    Yeah Simply.food, i use 2:1 rice and urad dal for uttappa. Definitely you can change it! Wont change the taste.

Indian Dal / Lentils

Lentils, known as Dal are a staple in an Indian diet, especially vegetarian. For me, dal is comfort food. 5 different dal varieties - Toor, Moong, Chana, Masoor and Urad are commonly used in Indian sweet and savory delicacies. You can cook dal with just one kind or a mix of two or more. I generally cook dal with 1:1 Toor and Moong dals. But then, we like Panchmel or Panchratna Dal too, which is made of all five. Most dal recipes have Toor dal as the primary ingredient. It is also known as Toovar or Arhar dal or Split Pigeon Peas . Some of our family favorite dal recipes are Dalitoy (Konkani Dal)  Tadka Dal Among all lentils, moong dal and masoor dal take lesser time to cook. Moong dal is also known as Split Green Gram or Split Mung Bean . Moong dal is also used in making sweet dishes like Mung Dal Kheer  Mung Dal Puranpoli Chana dal is also known as Split Bengal Gram or Split Chickpeas . Chana Dal takes a little more time to cook as compared to toor dal....

Samosa, the most loved Indian appetizer with a crisp crust and savory potato stuffing. When you make such fried fast food at home, you get to make some changes to make it healthy.  Here are some Whole Wheat Aloo Matar Samosas for you to try at home and savor them as much as we did.
