Indian Paneer Bhurji

There are days when you feel too lazy to cook. Plus, you have no leftovers in the refrigerator and you don't want a takeout either.  
Once I was telling my colleague and friend how I have no idea to cook for today's dinner. This was when I was working in Mumbai and we were returning home. My friend started throwing some ideas and one of them was Paneer Bhurji. Back then, I knew only about Egg Bhurji. That night, I tried my friend's recipe with a few tweaks. Since then, this recipe is a regular at my place, especially when I don't have time for something elaborate.

Ingredients:
Paneer/Indian Cottage Cheese - 200 gm 
Onions - 2 medium
Tomatoes - 2 medium
Bell Peppers/Capsicum (coloured) - 1 cup
Cilantro/Coriander Leaves - few sprigs 
Green Chillies - 6
Garlic - 4 cloves
Ginger - an inch piece 
Cumin/Jeera seeds - 1 tsp
Turmeric/Haldi - 1/2 tsp
Garam Masala - 1/4 tsp
Oil - 2 tbsp
Salt

How to make Paneer Bhurji:
  • Heat oil in a kadhai and add cumin seeds. After few seconds, add finely chopped onions, grated ginger and grated garlic. Fry till onions turn soft.
  • Add finely chopped tomatoes, green chillies, bell peppers and fry till tomatoes are mashed.  
  • Feel free to add any other veggies of your choice like green peas, lima beans, carrots and your favorite seasonings.
  • Add grated cheese, chopped cliantro, turmeric, garam masala, salt and mix well. Cook it covered for 5 - 10 min and its done. Serve Paneer Bhurji with Chapati or Phulka.
  • The cottage cheese which you find in an American store won't work for this recipe. You need the firm Indian Cottage Cheese or Paneer.

    But Paneer is also known as cottage cheese or Asian cheese..

Most dal recipes have Toor dal as the primary ingredient. It is also known as Toovar or Arhar dal or Split Pigeon Peas . Some of our family favorite dal recipes are Dalitoy (Konkani Dal)  Tadka Dal Among all lentils, moong dal and masoor dal take lesser time to cook. Moong dal is also known as Split Green Gram or Split Mung Bean . Moong dal is also used in making sweet dishes like Mung Dal Kheer  Mung Dal Puranpoli Chana dal is also known as Split Bengal Gram or Split Chickpeas . Chana Dal takes a little more time to cook as compared to toor dal....
