Spinach Carrot Paratha

Palak Gajar Paratha
Healthy parathas made of green spinach and orange carrots.
 
Ingredients:
Wheat Flour - about 3 cups
Baby Spinach Leaves - 2 cups
Grated Carrots - about 2 cups
Green Chillies - 4
Coriander/Cilantro leaves - few sprigs
Garlic - 4 big cloves
Ginger - 1/2 inch piece
Cumin/Jeera Seeds - 1/2 tsp
Coriander Seeds - 1 tsp
Butter or Oil
Salt

How to cook Gajar Palak Paratha:
  • Cook the spinach leaves covered with few drops of water.  You can use chopped raw spinach as well.  Let it cool.
  • In a mixing bowl, add wheat flour, cooked spinach and salt. Knead into a soft dough using water.  Use few drops of oil and knead again. Keep it covered for about 30 minutes.
  • Grind coriander seeds to a coarse powder.  Finely chop ginger, garlic, green chillies and cilantro leaves.

  • Carrot Stuffing: Heat about 2 tsp oil in a pan.  Add cumin, ginger and garlic.  Saute for a minute and add grated carrots, finely chopped green chillies.  Saute till carrots are cooked.  Add ground coriander seeds, chopped cilantro, salt.  Continue cooking at low flame till moisture is lost and the stuffing is dry.  Let it cool.
  • Make round balls of the wheat dough.  Roll each one big enough (4 - 5 inches diameter) to hold the stuffing.
  • Place 1 - 2 tbsp stuffing in the centre and gather the edges into a round ball.  Roll the stuffed ball gently dusting wheat flour, like roti or slightly thicker.  Repeat the same for other stuffed balls.
  • Heat a griddle/tawa and roast rolled stuffed Palak Gajar paranthas both sides using butter or oil.
Serve hot Spinach Carrot parothas with curd, chutney, pickle or curry.
