Lettuce Salad with Jalapenos

Lettuce is the most commonly used Salad vegetable here.  There are different types - Iceberg, Romaine, Chinese.  I have used Iceberg lettuce which looks similar to cabbage.
I generally use dry Italian Herb Seasoning for salads, but this time I tried Cajun Seasoning.  Cajun Seasoning tastes great with grilled veggie pastas and salads.  You can substitute it with any of your favourite seasonings.
You can use 'Iceberg and Romaine Blend' of Salads which also have carrots and red cabbage.  Along with lettuce, you can add few cucumber slices and diced tomatoes too.

Ingredients:
Iceberg Lettuce - 1
Red Onion - 1 small
Jalapenos Peppers/Green Chillies - 1
Garlic - 1 big clove
Bread Slices - 2 or 3
Black Pepper/Miri Powder - 1/2 tsp + 1/4 tsp
Cajun Seasoning - 1/2 tsp (optional)
Honey - 1/4 tsp
Olive Oil - 2 tbsp + 1 tbsp
Apple Cider Vinegar - 2 tbsp
Lemon or Lime Juice - 1 1/2 tbsp
Parmesan Cheese/Parmigiano Reggiano (optional)
Salt

Method:
1. Preparing Croutons: Dice the bread slices into bite size cubes.  Discard the seeds of jalapenos and finely chop it.  Also, finely chop garlic.  In a mixing bowl, add 1 tbsp olive oil, garlic, jalapenos, cajun seasoning, little salt and 1/4 tsp black pepper powder.  Drizzle this oil over diced bread cubes.  Preheat the oven at 400 deg. F.  Bake the bread cubes for about 15 minutes or till they turn crisp.  Alternatively, you can toast them in a pan or use store bought croutons.
2. Peel the onion skin and cut 2 thin round slices.  Finely chop the remaining onion.  I added only 2 tbsp finely chopped onions, add more if you like.
3. Discard the tough parts and dice the lettuce leaves into big pieces.  Wash and let the leaves drain in a sieve or a big strainer.
4. Preparing Vinaigrette: In a mixing bowl, add 2 tbsp olive oil, 2 tbsp apple cider vinegar, lemon juice, about 2 tbsp finely chopped onions, honey, salt and 1/2 tsp black pepper powder.  Mix with a whisk or a fork. 
5. Just before serving, toss the lettuce leaves, baked croutons, round onion slices with the vinaigrette.  Also, serve the salad topped with Parmesan Cheese.  I mixed Parmesan cheese along with lettuce and other ingredients.

Note: Ideally, a vinaigrette had 3 parts of olive oil and 1 part of vinegar.  This proportion is like a rule of thumb.  But I change it often to reduce the calories
