Microwave Masala Kaju (Cashews)

Masala Kaju
Which is your most favorite snack? Chips, Nachos, Roasted Nuts or Fresh Fruits. We like to snack on nuts.. sometimes roasted, sometimes deep fried Masala Peanuts. Nowadays, I find microwave cooking as a good alternative to deep frying. You might have read about Microwave Potato Chips - less oily, yet crunchy. Spicy crunchy Cashews cooked in a microwave is also something we love to binge on.

Ingredients:
Raw Cashews/Kaju - 2 cups
Chickpea Flour/Gram Flour/Besan - 4 tbsp
Corn Starch - 1 tsp
Coriander/Dhania Powder - 1 tsp
Cumin/Jeera Powder - 1 tsp
Chat Masala - 1 tsp
Cayenne Pepper/Red Chilli Powder - 1/2 tsp
Cooking Spray or Oil
Salt

How to cook Masala Kaju in a microwave:
  • In a mixing bowl or a big plate, add cashews, chickpea flour, coriander powder, cumin powder, chat masala, cayenne pepper and salt to taste. Mix all the ingredients. Add about 2 tbsp water and mix with your hands to coat the cashews well. Cashews will appear slightly moist. Lastly, add corn starch and mix again. Now the cashews will look slightly powdery.
  • Grease a microwave safe plate with cooking spray or oil. Spread the cashews on the plate evenly. Spray some more oil. Microwave for about 5 minutes. Make sure you stop the microwave after every one minute and toss the cashews. Let the cashews cool completely. If they are not crunchy enough, microwave for another minute or so.
  • Any other nuts like Almonds/Badam, Peanuts/Shenga can be relished this savory style.
Enjoy less oily, crunchy Masala Cashews anytime you like.

For me, dal is comfort food. 5 different dal varieties - Toor, Moong, Chana, Masoor and Urad are commonly used in Indian sweet and savory delicacies. You can cook dal with just one kind or a mix of two or more. I generally cook dal with 1:1 Toor and Moong dals. But then, we like Panchmel or Panchratna Dal too, which is made of all five. Most dal recipes have Toor dal as the primary ingredient. It is also known as Toovar or Arhar dal or Split Pigeon Peas . Some of our family favorite dal recipes are Dalitoy (Konkani Dal)  Tadka Dal Among all lentils, moong dal and masoor dal take lesser time to cook. Moong dal is also known as Split Green Gram or Split Mung Bean . Moong dal is also used in making sweet dishes like Mung Dal Kheer  Mung Dal Puranpoli Chana dal is also known as Split Bengal Gram or Split Chickpeas . Chana Dal takes a little more time to cook as compared to toor dal....

When you make such fried fast food at home, you get to make some changes to make it healthy.  Here are some Whole Wheat Aloo Matar Samosas for you to try at home and savor them as much as we did.
