Grilled Shrimp and Avocado Sandwich

Shrimp Avocado Sandwich
Anyone who cooks regularly has his / her own quick fixes for those lazy days. Some like one pot meals like pasta, pulav or biryani. I prefer sandwiches, wraps and quesadillas. Today, I tried something new for our sandwiches - Cajun seasoned grilled shrimp with creamy avocados. Cajun seasoning is one of my favorite spice blends. Pick one of your favorites and add a whole new twist to this easy sandwich.

Ingredients:
Shrimps/Prawns/Kolambi - 25 (big)
Lime Juice - 2 tbsp
Oil - 1 tbsp
Hot Sauce - 1 tbsp
Cajun Seasoning - 1 tbsp
Red Chili Powder - 1/2 tsp
Paprika - 1/2 tsp
Salt

Ciabatta Rolls or any other bread
Olive Oil
Mayonnaise or Tartar Sauce
Lettuce Leaves
Tomato Slices
Avocado Slices

How to make Grilled Shrimp and Avocado Sandwich:
  • Marinating Shrimps: In a mixing bowl, prepare the marinade. Add lime juice, oil, hot sauce, Cajun seasoning, chili powder, paprika and salt. Mix the marinade well. Add cleaned, deveined shrimps to the marinade. Coat them well. Cover the bowl with plastic food wrap and refrigerate it until you are ready to make sandwiches.
  • Instead of Cajun seasoning, you can use any other seasoning - Creole seasoning, Old Bay seasoning, Tandoori masala and so on.
  • Grilling Shrimps: Heat a grill pan for cooking shrimps. Grease the pan with cooking spray or oil. Cook the marinated shrimps on the sizzling hot pan until slightly charred on both sides. Transfer the grilled shrimps on a plate.
  • Assembling Sandwiches: Cut the bread rolls and brush them with olive oil. Slightly toast the bread in an oven or a pan. On one half of the bread, place lettuce leaves, tomato slices, grilled shrimp and avocado slices. And to the other half of the bread, apply mayo or tartar sauce. Bring both halves together and enjoy.
  • To cut down some calories, you can skip mayo or tartar sauce. Instead, double or triple up the creamy avocados.
