Spinach Pasta
Its been around 6 months now in Miami. I am really enjoying the sunny weather here. My kiddo especially loves her park time. I am missing the beautiful fall colors of Michigan though. Anyways, lets talk about food now.
These days I have been trying to include more leafy greens in our diet.
Jowar Methi Thepla, Palak Paneer Paratha, Kale White Bean Soup and today's Spinach Pasta are our family favorites. If you are looking for some healthy delicious recipes, try these and let me know.

Ingredients: 
Dry Elbow Pasta - 2 1/2 cups
Baby Spinach Leaves - about 250 gm (8 oz)
Grated Parmesan Cheese - 1 cup
Sharp Cheddar Cheese - 1 cup
Whole Milk Sour Cream - 1/2 cup
Red Onion - 1 medium
Roma Tomato - 2 medium
Garlic and Herb Seasoning - 1 1/2 tsp
Red Chili Flakes - 1/2 tsp
Olive Oil - 1 tbsp.

How to cook Spinach Pasta:
  • For the pasta sauce, finely chop onions. Puree tomatoes in a food processor and set it aside. Finely chop the spinach leaves. I used a food processor to chop spinach.
  • I have used red onion. You can use yellow or white onion as well. You can use vine ripe tomatoes instead of roma tomatoes.
Spinach Pasta Sauce
  • Heat a pan on medium heat and add oil. Next, add onions and sauté until onions soften. Add pureed tomatoes and sauté for a minute or so. Now, add chopped spinach and sauté for a minute.
  • Next, add garlic and herb seasoning and red chili flakes. Sauté for one more minute. Now add sharp cheddar cheese and sour cream. Stir and sauté until sauce starts boiling. Taste the sauce for seasoning. Your spinach cheese pasta sauce is ready.
  • You can add more or less cheese or sour cream depending on how thick you want the sauce to be. Also, you can chop some fresh garlic cloves and use dry Italian seasoning instead of Garlic and Herb seasoning. 
  • If sour cream is not available, use whole milk yogurt or heavy cream. Yogurt definitely has lesser calories as compared to sour cream.
  • Heat 3 - 4 quarts (12 - 16 cups) of water in a big pot. When water starts boiling, add 1 tsp salt and stir. Add dry elbow pasta and stir again. Cook the pasta for 6 - 8 minutes based on how al dente pasta you like. Or follow the cooking instructions on the pasta box. I added little salt just to lightly season the pasta.
Spinach Mac n Cheese
  • Drain the pasta in a colander or strainer. Add hot pasta to the sauce pan. Also, add grated parmesan cheese. Stir on medium heat and your Spinach Mac n Cheese is ready.
