Egg less Apple Sauce Cake
Hey everyone! Hope all is well. 
Just when I got used to the Miami weather, we had to move. So, now we are back in Dallas. I am hoping to stay in this new place for a long long time. In all this hustle bustle of settling in a new habitat, my 3 year old demands to bake a cake all by herself. Also, it has to be round like a birthday cake.
Here I present the first ever bake from our new kitchen. A soft, moist cardamom flavored egg less apple sauce cake.

Ingredients:
Unbleached All Purpose Flour/Maida - 2 cups
Unsweetened Apple Sauce - 2 cups
Granulated Sugar - 1 cup
Unsalted Butter - 1/4 cup 
Vegetable Oil - 1/4 cup
Baking Soda - 1 1/2 tsp
Green Cardamom/Elaichi - 3 pods (seeds only)
Chopped Nuts - 1 tbsp
Cooking Spray

How to bake an Egg-less Apple Sauce Cake:
  • Preheat the oven at 350 degrees F. Grease a cake pan (9 * 1.5 inch round pan) with cooking spray or oil or butter. 
  • Crush the cardamom seeds in a mortar pestle to a fine powder.
  • Roughly chop the dry fruits of your choice.
  • In a big mixing bowl, add the dry ingredients - all purpose flour, baking soda and cardamom powder. Mix it well with a fork or a spoon.
Vegan Apple Sauce Cake
  • In another microwave safe bowl, add butter. Microwave for a minute or until butter melts. To the melted butter, add oil and sugar. Mix well. Lastly, add apple sauce and mix well until sugar dissolves.
  • Pour this sugar oil butter mixture in the big bowl and mix well with a big spoon. Do not over-mix. Pour this cake batter in the greased pan. Sprinkle with chopped nuts.
  • For some crunch, fold in some chopped nuts in the batter. And for some color, add in some dry fruits like cranberries or cherries.
  • Vegans can skip butter and add 1/4 cup oil instead. If you don't like cardamom, use cinnamon or vanilla extract. Sometimes, I add saffron/kesar as well to this cake.
  • Bake the cake for 32 - 35 min at 350 degrees F or until a skewer inserted in the center of the cake comes out clean.

Moong dal is also known as Split Green Gram or Split Mung Bean . Moong dal is also used in making sweet dishes like Mung Dal Kheer  Mung Dal Puranpoli Chana dal is also known as Split Bengal Gram or Split Chickpeas . Chana Dal takes a little more time to cook as compared to toor dal....
