Mediterrean One Pot Meal - Shakshuka


Hey everyone! Hope all is well in your world. These days I am watching an anime 'Haikyu'. Took me back to school. My kiddo introduces me to new things. One of them is anime. It's surprisingly fun. 

Talking of new things, I recently came across a Mediterranean dish - Shakshouka or Shakshuka. Poached eggs in a flavored tomato sauce. I found my lazy way of making this One Pot Meal. Hope you try this too and make it your own.

Ingredients:

Tomato Sauce / Marinara Sauce - about 2 cups

Cooked Black Eyed Peas - about 1 cup

Eggs - 4

Dry Basil Leaves - 1 tsp

Paprika - 1 tsp

Cayenne Pepper - 1/4 tsp

How to make Mediterranean Shakshuka:

  • Heat a pan and add tomato sauce. Add cooked beans and all the seasonings. Bring it to a boil. Taste the sauce and see if you need more flavors. I didn't add any salt, since store bought Marinara has plenty. 
  • Lower the heat and add eggs. Cover and cook at low heat, until the raw eggs change to white color. Egg yolks are supposed to be runny for Shakshuka. Cook eggs the way you like. Cook it longer if you don't like runny yolk.
  • There are many variations to Shakshuka. You can add sauteed onions, bell peppers as well. Some add cheese, some yogurt and so on. Same goes for seasonings - some add ground cumin, some add soy sauce, some add oregano. Feel free to experiment.
  • Instead of beans, some add lentils. I like leftover beans for my Shakshuka. 
  • Some days, I add chopped spinach along with beans to make it more nutritious. Some days I garnish with fresh basil. 

Serve Poached Eggs in Tomato Sauce with a bread of your choice. Enjoy!

Naval Kol Bhaji / Kohlrabi Stir-fry

Green Kohlrabi called as Navalkol in Marathi and Navilkosu in Kannada, belongs to the cabbage family.  My Mom used to make this stir fry very often.  Just like cabbage, this vegetable in available in two colors - green and purple.  I was quite hesitant about the purple one, as I haven't seen that back in India.  Anyway, I picked the green bulbs and Navalkohl Bhaji with Chana Dal was part of our healthy vegetarian meal today.
