Romaine Lettuce Koshimbir
Koshimbir, a vegetable yogurt salad is a regular at our place. Some of you might know this as North Indian Raita, where cucumbers are the main ingredient. 
Today, I made this Indian salad with crunchy Romaine Lettuce leaves. This salad with a creamy yogurt dressing is a good option for those who don't like Ranch dressing. Plus, its quite easy to make.

Ingredients:
Romaine Lettuce (chopped) - 3 cups
Red Onions (finely chopped) - 1/3 cup
Tomato - 1 medium
Yogurt/Curds/Dahi - 1/2 cup
Black Pepper Powder - 1/4 tsp
Green Chili/Jalapeno Pepper - 1
Salt

How to make Romaine Lettuce Koshimbir:
  • Wash Romaine lettuce leaves well and remove all excess water using salad spinner. Discard the thick stems and medium chop the leaves.
  • When it comes to greens, the darker the color, better its nutritive value. That's the reason I prefer slightly darker Romaine lettuce leaves for this salad. You can use Iceberg Lettuce as well.
  • Discard the soft pulp and seeds of the tomato and finely chop it.
  • Discard the seeds of the jalapeno pepper (or any other green chili) and finely chop it.
  • In a mixing bowl, add yogurt, fresh ground black pepper, chopped jalapenos and salt. Mix well. When you are ready to serve, add lettuce, onions and tomatoes. Mix again. Garnish with cilantro leaves and serve.
  • I have used full fat / whole milk yogurt. For lesser calories, you can use low fat or fat free yogurt as well. Based on your likes and dislikes, add more or less of any ingredient.

Lentils, known as Dal are a staple in an Indian diet, especially vegetarian. For me, dal is comfort food. 5 different dal varieties - Toor, Moong, Chana, Masoor and Urad are commonly used in Indian sweet and savory delicacies. You can cook dal with just one kind or a mix of two or more. I generally cook dal with 1:1 Toor and Moong dals. But then, we like Panchmel or Panchratna Dal too, which is made of all five. Most dal recipes have Toor dal as the primary ingredient. It is also known as Toovar or Arhar dal or Split Pigeon Peas . Some of our family favorite dal recipes are Dalitoy (Konkani Dal)  Tadka Dal Among all lentils, moong dal and masoor dal take lesser time to cook. Moong dal is also known as Split Green Gram or Split Mung Bean . Moong dal is also used in making sweet dishes like Mung Dal Kheer  Mung Dal Puranpoli Chana dal is also known as Split Bengal Gram or Split Chickpeas .
