Shrimp (Prawn) Tacos with Mango Salsa

Shrimp Mango Taco
As you guys know, Mexican food is one of our favorites. Making Tacos at home is quite effortless. This is a wholesome meal with proteins, veggies and carbs. Since I had to finish some mangoes, mango salsa was the highlight of our tacos. It was a refreshing change from the regular tomato salsa. If you love mangoes too, you must give this a try.

Grilled Shrimp:
Shrimps/Prawns - 25
Lime Juice - 2 tbsp
Cajun Seasoning - 1 1/2 tsp
Red Chili Powder - 1 1/2 tsp
Oil - 1 1/2 tbsp
Salt

Mango Salsa:
Mangoes (medium chopped) - 1 1/2 cups
Red Onions (finely chopped) - about 1/3 cup
Jalapeno Pepper - 1
Cilantro/Coriander Leaves - few sprigs
Lime Juice - 2 tbsp
Black Pepper Powder - 1/4 tsp
Salt

Whole Wheat Tortillas
Shredded Lettuce
Grated Cheese
Sour Cream
Avocado Guacamole

How to make Mango Shrimp Tacos:
Mango Salsa:
  • A firm (not mushy) mango works best for salsa. Discard the seeds of the jalapeno pepper and finely chop it. Finely chop cilantro leaves too. In a mixing bowl, add mangoes, onions, jalapenos, cilantro, 2 tbsp lime juice, fresh ground black pepper and salt. Mix and set it aside for about 2 hours, so that all the flavors blend well.
  • Along with mangoes, you can add diced pineapple if you like Mango Pineapple Salsa.

Cooking Shrimps:
  • In a mixing bowl, prepare the marinade. Add 2 tbsp lime juice, salt, 1 tsp Cajun seasoning and 1 tsp red chili powder. Add cleaned shrimps to the bowl and mix. Cover the bowl with plastic food wrap and refrigerate the shrimps for about an hour.
  • If Cajun seasoning is not available, use any other seasoning like Chipotle seasoning.
  • Heat oil in a grill pan. Discard the marinade and add the marinated shrimps to the hot pan. Cook until the shrimps start turning changing color, about a minute on each side. Now add 1/2 tsp red chili powder, 1/2 tsp Cajun seasoning and cook for few seconds.
Building Tacos:
  • Heat a griddle and roast both sides of each tortilla for few seconds.
  • Let everyone pick their favorite toppings - lettuce, cheese, guacamole, sour cream. This is how I love my Shrimp Taco - soft whole wheat tortillas topped with shredded Romaine Lettuce, Mango Salsa and finally Cajun seasoned Grilled Shrimp.

    1. Taco Seasoning also tastes good.. If all 3 are not available, Tandoori Masala or Meat Masala are the best options.

Naval Kol Bhaji / Kohlrabi Stir-fry

Green Kohlrabi called as Navalkol in Marathi and Navilkosu in Kannada, belongs to the cabbage family.  My Mom used to make this stir fry very often.  Just like cabbage, this vegetable in available in two colors - green and purple.  I was quite hesitant about the purple one, as I haven't seen that back in India.  Anyway, I picked the green bulbs and Navalkohl Bhaji with Chana Dal was part of our healthy vegetarian meal today.

Indian Dal / Lentils

Lentils, known as Dal are a staple in an Indian diet, especially vegetarian. For me, dal is comfort food. 5 different dal varieties - Toor, Moong, Chana, Masoor and Urad are commonly used in Indian sweet and savory delicacies. You can cook dal with just one kind or a mix of two or more. I generally cook dal with 1:1 Toor and Moong dals. But then, we like Panchmel or Panchratna Dal too, which is made of all five. Most dal recipes have Toor dal as the primary ingredient. It is also known as Toovar or Arhar dal or Split Pigeon Peas . Some of our family favorite dal recipes are Dalitoy (Konkani Dal)  Tadka Dal Among all lentils, moong dal and masoor dal take lesser time to cook. Moong dal is also known as Split Green Gram or Split Mung Bean . Moong dal is also used in making sweet dishes like Mung Dal Kheer  Mung Dal Puranpoli Chana dal is also known as Split Bengal Gram or Split Chickpeas . Chana Dal takes a little more time to cook as compared to toor dal....
