Egg Bhurji (Scrambled Eggs) Paratha

At the end of the week, when I run out of fresh vegetables, I turn to two of my favorite ingredients - frozen peas and eggs. I must say, both are readily available in my refrigerator most of the times.  Its been ages I made a stuffed paratha in my kitchen.  Egg Parathas are made two ways - one applying beaten eggs to roti, something similar to a French toast and another way stuffed with eggs. We like the latter, stuffed egg bhurji parathas with green chili achar. Stir fried Boiled Eggs

Potatoes and eggs are two of my favorite ingredients which can be cooked in numerous ways. Both blend well with a variety of seasonings, be it with Indian spices, Chinese style or some dry herbs. Ingredients: Eggs - 5 Onion - 1 medium Mini Bell Peppers/Capsicum - 2 Garlic - 2 big cloves Ginger (grated) - 1/2 tsp Coriander/Cilantro Leaves - few sprigs Cumin/Jeera Powder - 1/2 tsp Black Pepper Powder - 1/2 tsp Cayenne Pepper/Red Chilli Powder - 1/4 tsp Soy Sauce - 1 tbsp Vinegar - 1 tbsp Salt Oil How to cook Stir fried Boiled eggs: Boil the eggs in about 6 cups water for about 20 minutes. After cooling, peel the shells and dice each egg into two parts. Finely chop onions, bell peppers (I used yellow and red), garlic and cilantro. Heat about 1 tbsp oil in a pan. Egg Curry

When I don't have time to cook something elaborate, I end up preparing this Egg curry with a few basic Indian spices. An egg curry with plain rice, papad and cucumbers turns out to be a great menu on a lazy day. Ingredients: Eggs - 6 Onion - 1 medium Tomatoes - 2 medium Dry Red Chilies - 5 Ginger Garlic Paste - 2 tsp Chat Masala - 1 tsp Coriander/Dhania Powder - 1 tsp  Cumin/Jeera Powder - 1 tsp Fennel/Saunf Seeds - 1/2 tsp Cilantro/Coriander Leaves - few sprigs Salt Oil How to cook Simple Egg Curry: Boil eggs in 4 - 5 cups water for about 10 minutes. Let the eggs cool completely before peeling. Using a knife, make slits in the eggs. Finely chop onions and cilantro leaves. Puree tomatoes and dry red chilies to a smooth paste. Egg Methi (Fenugreek)

I love Methi leaves. Not a big fan of Spinach. Whenever fresh fenugreek leaves are available, I definitely pick it up. Goes well as Paratha, with potato, paneer. Let me share one more methi recipe with eggs. Ingredients: Boiled Eggs - 6 Fenugreek/Methi Leaves - a bunch Onions - 2 medium Tomatoes - 2 medium Ginger - 1/2 inch piece Garlic - 4 big cloves Cilantro Leaves - few sprigs Dry Red Chilies (Byadagi) - 8 Coriander/Dhania Seeds - 1 tbsp Poppy Seeds/Khuskhus - 1 tbsp Garam Masala or any other spice mix - 1/4 tsp Salt Oil How to cook Indian Egg Methi: Roughly chop washed fenugreek leaves (with tender stems). Roughly chop onions, tomatoes, ginger and garlic. Finely chop cilantro. Remove the shells of the boiled eggs and prick them several times with a fork.  Heat about 2 tbsp oil in a pan and add chopped onions. Sauté till onions turn soft and transparent. Egg Vegetable Puffs

Savory Puffs or Pattice is a popular tea time snack in India. Whenever I make these puffs, I make it a point to add a few veggies as well. Ingredients: Pastry Sheet - 1 Eggs - 2 Onion - 1 medium Carrot - 1 big Cabbage - 1 cup Cilantro/Coriander Leaves - few sprigs Garlic - 2 big cloves Cumin/Jeera Seeds - 1/2 tsp Cayenne Pepper/Red Chili Powder - 2 tsp Chicken Masala or any other spice mix - 1/4 tsp Salt Oil How to make Indian Egg Puffs or Egg Pattice: Thaw the pastry sheets as per the instructions. It takes about 45 minutes. Boil the eggs in about 5 cups water for 12 - 15 minutes. After cooling, remove the shells and cut the eggs in halves. Finely chop onion, cilantro, garlic. Wash, peel and grate or chop the carrot. Heat 1 - 2 tbsp oil in pan. Add cumin seeds, chopped garlic. After a minute, add onions. Saute till onions turn soft, about 5 minutes. Veggie Egg Rice

Egg Rice with spring onions and green peas.  You can add more veggies like carrots, cabbage, corn etc. Ingredients: Basmati Rice - 1 cup Eggs - 4 Spring/Green Onions - about 2 cups Green Peas/Matar - 1 cup Cilantro/Coriander Leaves - few sprigs Green Chillies - 2 Bay Leaf - 1 Coriander/Dhania Seeds - 1 1/2 tsp Cumin/Jeera Seeds - 1 tsp Fennel/Saunf Seeds - 1/2 tsp Garlic - 5 big cloves Cayenne Pepper/Red Chilli Powder - 1 tsp Black Pepper Powder/Kali Miri - 1/4 tsp Chicken Masala or any spice mix - 1/2 tsp Salt Oil How to cook Egg Rice: Finely chop spring onions (both green and white parts), green chilies, garlic and cilantro.  Wash rice 3 - 4 times in water, drain the water. Cook the rice in 1 1/2 cups water with little salt. Boil the eggs in about 5 cups water for 12 - 15 minutes. After cooling, remove the shells. Make long slits in the eggs with a knife without breaking them. Grind coriander seeds and fennel seeds to a coarse powder. Heat...

Egg Puffs

Ingredients: Pastry Sheet - 1 Eggs - 7 Onion - 1 big Green Chillies - 10 Garlic - 4 big cloves Cilantro/Coriander leaves - few sprigs Cumin/Jeera seeds - 1/2 tsp Chat Masala or Aamchur - 1/4 tsp Salt Oil How to bake Indian Egg Puffs or Pattice: Thaw the pastry sheets as per the instructions. It takes about 40 minutes. Boil 6 eggs in water for 10 - 15 minutes. After cooling, remove the shells and cut the eggs in halves. Discard the yolk and roughly dice the eggs. You can add yolk if you like. Heat about 1 tbsp oil in a pan. Add cumin seeds and grated garlic. When cumin seeds darken, add finely chopped onions and green chilies. Add little salt and sauté till onions soften. Add diced eggs, little more salt, chat masala and chopped cilantro. Sauté at low flame for about 5 minutes or till all the ingredients are mixed well. Egg Bhurji or Anda Bhurji is an Indian recipe of scrambled eggs with veggies like capsicum/green bell pepper, green peas, tomatoes. An easy and quick fix on a busy day.

Marathi Egg Curry

Growing up in Mumbai, we had some lovely neighbors who later became close friends. Today's recipe is shared by one such dear family friend.  This used to be a weekend special in my Mom's kitchen. It is an elaborate process, but every time I cook this, it is worth the effort. You can cook chickpeas or veggies too in this coconut gravy.

Egg Omelette with Veggies

An Indian Egg Omelette is generally made with onions, green chillies and cilantro/coriander leaves.  I like to add some veggies like capsicum/bell pepper, carrot etc. which makes the omelette healthy and tasty. Ingredients: Eggs Onions Capsicum/Bell Peppers Carrots Cabbage Tomatoes Green Chillies Cilantro/Coriander leaves Black Pepper Powder Salt Oil Method: 1. Finely chop onions, capsicum, cabbage, tomatoes, green chillies and cilantro.  Grate carrots.  You can use any veggies of your choice. 2. I prefer one egg at a time. Break an egg and pour it in a bowl.  Whisk/beat (with a spoon/fork) the egg till the yolk is mixed well.  Add salt, little black pepper powder, chopped green chillies, about 1 tsp each of all chopped veggies  and whisk again. 3. Savory French Toast

Ingredients: Bread slices - 8 Eggs - 4 Black Pepper Powder - 1 tsp Red chilli powder - 1 tsp Salt - 1/2 tsp Oil Method: 1. Break the egg shells and transfer the eggs in a mixing bowl. 2. Whisk eggs slightly so that egg yolks are not seen. 3. Add salt, red chilli powder, black pepper powder and whisk well to avoid lumps of the powders. 4. Spread this egg mixture on both sides of the bread slices.  Or dip the bread slices in the egg mixture and coat both sides. 5. Heat a pan and roast the coated bread slices drizzling little oil. 6. Golden brown Spicy Toast is ready to serve.
