Peanut Butter Veggie Rice Noodles

Hey everyone! It is 10:00 am in my part of the world. Hope you all are doing well. These days I cook a lot at home, even on weekends. Eating out at a restaurant or getting home delivery is no longer convenient. This weekend I ended up cooking  White Rice Noodles with loads of veggies . I haven't found healthier brown rice noodles made entirely of brown rice yet.  If noodles are your favorite too, do try this.  Feel free to tweak the ingredients. Ingredients: Rice Noodles - 8 oz (225 g) Bell Peppers - about 1/2 cup Sliced Carrots - about 1/2 cup Sliced Cabbage - about 1 cup Red Onions - about 1/4 cup Green Onions - 8 sprigs Baby Spinach - about 1/2 cup Peanut Butter - 2 tbsp Soy Sauce - 1 tbsp Sriracha Sauce - 1 tbsp Lemon Juice - 1 tbsp Oil - 1 tbsp How to cook Veggie Rice Noodles with Peanut Butter: Slice all the veggies of your choice. Oven Roasted Teriyaki Mushrooms

Everyday, before cooking our meals, I take a look at leftovers. Most days its not much. At times, leftovers are good since I don't have to cook. But health wise, I prefer fresh cooked food. No doubt, some curries taste best the next day. Turns out, today is my lucky day.  All I had to do was to roast some mushrooms. Ingredients: Mushrooms - 400 gm Olive Oil - 3 tbsp Teriyaki Sauce - 1 tbsp Soy Sauce - 1 tbsp Chili Sauce - 1 tbsp Black Pepper Powder - 1/2 tsp Red Chili Powder - 1/4 tsp Green Onions/Scallions - 3 Salt How to roast Teriyaki Mushrooms in an oven: Wipe the mushrooms with a moist paper towel or a kitchen towel. I have used Button Mushrooms. You can use any other kind. Cut the mushrooms into thick slices. Preheat the oven at 375 degrees F. Cooking restaurant style food at home has its own advantages. You get to eat tasty treats and cut down the calories as well.  Today's recipe is a low calorie baked version of the popular Indo Chinese Chicken Manchurian. If you guys liked my earlier post  Prawn Manchurian , you will definitely love this one too. Prawn Manchurian

Gobi Manchurian , Vegetable Manchurian are some of the popular Indo Chinese recipes. Indo Chinese food has a quite distinctive taste - spicy, tangy, slightly sweet. If you are looking for a sea food version of Manchurian, this Prawn Manchurian with Spring Onions is perfect. Ingredients: Prawns/Shrimps/Jhinge/Sungta - 1 pound Capsicum/Bell Pepper - about 1 cup Corn Starch - 1 tbsp Spring Onions/Green Onions - 6 Ginger Garlic Paste - 2 tbsp Vinegar - 2 tbsp Soy Sauce - 1 tbsp Black Pepper Powder - 1/4 tsp Tomato Ketchup - 1 tbsp Tomato - 1 medium Dry Red Chilies - 4 Salt Oil How to cook Chinese Prawn Manchurian: Clean the prawns by removing the shells and the black vein. Wash the prawns well. In a mixing bowl, add ginger garlic paste, vinegar, soy sauce, black pepper powder and little salt. Add salt keeping in mind that some sauces have salt. Hakka Noodles

Spicy, sweet and tangy Indo-Chinese Hakka Noodles with loads of veggies. Ingredients: Noodles - 150 gm Mixed Vegetables - about 3 cups Onion - 1 small Garlic (finely chopped) - 1 tsp Ginger (finely chopped) - 1 tsp Green Chili Paste - 1/2 tsp Black Pepper Powder - 1/2 tsp Tamarind Paste - 1/2 tsp Molasses or Light Brown Sugar - 1 tsp Tomato Ketchup - 1 tbsp Vinegar - 1 tbsp Salt Oil How to cook Veggie Hakka Noodles: Cook noodles as per instructions or until half cooked with salt and (about 1 tbsp) oil. Julienne slice the onion. Thinly slice all the veggies of your choice - green beans, green or red cabbage, carrots, celery, green peas, capsicum/bell peppers, green/spring onions. You can add bean sprouts, mushrooms, corn, peanuts as well. Heat about 2 tbsp oil in a kadhai/wok. Add onions, ginger and garlic. Sauté for a minute and add chopped veggies. Baked Chinese Sesame Chicken

Sesame Chicken is one of the popular Chinese chicken recipes which is generally deep fried.  This recipe is a healthier baked version. Ingredients: Chicken Breasts - 2 (about 400 gms) Soy Sauce - 1 tbsp Vinegar - 1 tbsp Honey - 1 tsp Cayenne Pepper/Red Chilli Powder - 1 1/2 tsp Chipotle Seasoning - 1 tsp (optional) Turmeric/Haldi - 1/4 tsp All Purpose Flour or Corn Flour - 1/2 cup White Sesame Seeds/Til - 1 1/2 tbsp Black Pepper Powder/Miri - 1/4 tsp Salt - 1/2 tsp Oil preferably Olive oil - 4 tbsp

Chilli Chicken

An Indo Chinese recipe of Chicken. Ingredients: Chicken - 350 gms Capsicum/Bell Peppers - 1/2 cup Spring/Green Onions - 1/2 cup Onion - 1 medium Tomato - 1 big Garlic - 5 big cloves Ginger - 1/2 inch piece Red Chilli Powder/Cayenne Pepper - 1 1/2 tbsp Black Pepper Powder - 1/4 tsp Soy Sauce - 1 tbsp Vinegar - 1/2 tbsp Salt Oil Method: 1. Grind roughly diced tomato, ginger, garlic, red chilli powder, black pepper powder, soy sauce, vinegar, salt to a fine puree.  Marinate washed chicken pieces in this marinade for 2 - 3 hours.  Keep it covered and preferably refrigerated. 2. Finely chop onions and spring onions.  Dice green capsicum or coloured bell peppers into cubes. 3. Heat 1 - 2 tbsp oil in a pan and add finely chopped onions.  Saute till onions turn soft.  Add the marinated chicken pieces and saute for 2 - 3 minutes. 4.
