Mexican Shrimp Burrito Bowl

Howdy everyone! Hope your day is going well. My morning started with a 30 minute walk on the treadmill. Feeling quite refreshed. Today's menu is Tex Mex food. I love Quesadillas, Guacamole, Flan. Do tell me your favorite Mexican delicacy. Years ago,  I shared the Veggie Burrito Bowl. How about a Mexican Sea Food Shrimp Burrito Bowl?

Ingredients:

Shrimp / Prawn / Jhinga - about 30

Dry Black Beans - 1/2 cup

Garlic Herb Seasoning - 2 tsp

Paprika - 1 tsp

Avocados - 2

Pickled Jalapeno Slices - about 8

Green Lime - 2

Tomatoes - 2

Red Onions - 1 medium

Green Bell Pepper - 1 optional

Cilantro/ Coriander Leaves - few sprigs

Black Pepper Powder

Cooking Spray or Oil

Romaine Lettuce

Tortilla Chips

Salt


How to make a Homemade Shrimp Burrito Bowl:

  • Soak Black Beans in plenty of water overnight. Drain the water and wash the soaked beans a couple times. Add water and cook them. I cook soaked beans in my Presto pressure cooker. Canned pinto beans or black beans are great to save time. Season the beans with salt and black pepper. Feel free to season the beans with your favorite seasonings like Taco Seasoning, Cajun Seasoning and so on.
  • Finely chop red onion, tomatoes, bell pepper and cilantro. I discard the soft pulpy part of the tomatoes.
  • In a mixing bowl, start adding ingredients for Onion Tomato Salsa. Add tomatoes, onions, bell pepper, cilantro, lime juice, salt and black pepper. Mix well and set it aside for a couple hours. 
  • You'll need another bowl for Guacamole. Add avocados, pickled Jalapeno slices, lime juice, salt, black pepper, red onions and cilantro. Mash the avocados with a fork and mix well. Your Avocado Guacamole is ready.
  • Last step would be Pan Fried Shrimp. In a mixing bowl, add shrimp, garlic herb seasoning, salt, black pepper and paprika. I use a salt free garlic herb seasoning. Use any other seasoning of your choice. Mix the shrimp well. Heat a cast iron pan and add some oil or cooking spray. Add the marinated shrimp and flip after a few seconds. Shrimp will take less than a minute to cook in a nice hot pan. 

Serve Shrimp Burrito Bowl with Tortilla Chips and finely shredded Lettuce.

Some of our family favorite dal recipes are Dalitoy (Konkani Dal)  Tadka Dal Among all lentils, moong dal and masoor dal take lesser time to cook. Moong dal is also known as Split Green Gram or Split Mung Bean . Moong dal is also used in making sweet dishes like Mung Dal Kheer  Mung Dal Puranpoli Chana dal is also known as Split Bengal Gram or Split Chickpeas . Chana Dal takes a little more time to cook as compared to toor dal....

When you make such fried fast food at home, you get to make some changes to make it healthy.  Here are some Whole Wheat Aloo Matar Samosas for you to try at home and savor them as much as we did.
