Potato can be cooked in numerous ways. This one is my favourite, the way my Mom cooks. A Konkani potato stir fry with coconut.
Potatoes - 2 big
Green Chillies - 4 Curry Leaves - a sprig
Turmeric - 1/4 tsp
Mustard Seeds - 1/2 tsp
Grated Coconut - 1 tbsp
Asafoetida/Hing - 1/4 tsp
Oil - 2 tbsp Salt
1. Peel the potato skin and cut the potatoes into long julienne slices just like fries. Place them in a bowl of water to avoid darkening. 2. Pat curry leaves and green chillies dry.
3. Heat oil in a kadhai/wok and add mustard seeds, curry leaves and asafoetida. After mustard seeds pop, add potatoes (drain the water), lengthwise slit green chillies. Saute till potatoes soften. 4. Add salt, turmeric, grated coconut. Add more coconut if you like. Saute for 5 more minutes or till potatoes are slightly glazed. Easy quick Batatya Talasaani is ready.
