Pav Bhaji

Pav Bhaji
A popular street food of Mumbai, now loved all over India. Word to word translation would be bread and vegetables. But it is much more than that. Here is my recipe of spicy tasty Pav Bhaji, made healthier with leafy vegetables.

Ingredients:
Potato - 1 big
Onion - 1 big
Tomatoes - 2 small
Capsicum/Green Bell Pepper - 1/2 cup
Green Peas - 1/2 cup
Carrots - 1/2 cup
Green/Leafy Vegetables - 1/2 cup
Ginger Garlic Paste - 2 tbsp
Cayenne Pepper/Red Chilli Powder - 1 tsp
Pav Bhaji Masala - 1 tbsp
Butter - 1 tbsp
Oil - 1 tbsp
Cilantro/Coriander Leaves - few sprigs
Cheese - optional
Pav/Buns/Dinner Rolls or Sliced Bread
Salt

How to cook Mumbai Pav Bhaji:
  • Finely chop onions, tomatoes and cilantro. Medium chop carrots and capsicum. Boil the potato in enough water. 
  • Cook green peas, carrots, capsicum and green leafy vegetables with 1/2 cup water. Cook the veggies covered. Save the water used for cooking as well.

  • Heat 1 tbsp oil and 1 tbsp butter in a pan or kadhai. Add ginger garlic paste and saute for a minute or so. Now add onions, little salt and stir until they turn soft. Add tomatoes and saute till tomatoes are mashed.
  • Now add pav bhaji masala and cayenne pepper. Saute for 2 - 3 minutes at low flame. Add cooked veggies and mash them. Add the water used for cooking veggies, mashed boiled potato and salt. Continue cooking till all the veggies are mashed. Add about 1 cup water and cook till you get the desired consistency. Serve this Bhaji with a dollop of butter if you like. Garnish with chopped cilantro leaves.
  • Roast the Pav or Bread with little butter.
Serve Pav Bhaji with butter, raw onions and lemon. Add grated cheese if you like Cheese Pav bhaaji.

Naval Kol Bhaji / Kohlrabi Stir-fry

Green Kohlrabi called as Navalkol in Marathi and Navilkosu in Kannada, belongs to the cabbage family.  My Mom used to make this stir fry very often.  Just like cabbage, this vegetable in available in two colors - green and purple.  I was quite hesitant about the purple one, as I haven't seen that back in India.  Anyway, I picked the green bulbs and Navalkohl Bhaji with Chana Dal was part of our healthy vegetarian meal today.

Ricotta Cheese Pedha / Peda

Once or twice every week, my Dad used to get some treats on his way back home. Somedays it used to Kandi Pedha or Kesar Pedha. This is my attempt of making Indian Mithai at home. I might dare say, I was pretty successful. Touch Wood! Tasted and looked great! If you are a fan of milk sweets, do try this easy home made Kesar Pedha recipe made of Ricotta Cheese and milk powder. Ingredients: Ricotta Cheese (full fat) - 15 oz (about 400 gm) Milk Powder - 3/4 cup Whole Milk - 1/2 cup Sugar - 1/4 cup + 2 tbsp Ghee/Clarified Butter - 1 tbsp Green Cardamom/Elaichi - 2 pods Saffron/Kesar - few strands Pistachios/Pista - 3 How to make Pedha using Ricotta Cheese: Crush cardamom seeds and saffron in a mortar pestle to a fine powder. Finely chop or slice the pistachios or any other nuts of your choice. Heat ghee in a heavy bottom kadhai or pan. Add ricotta cheese and stir continuously.
