Dahi Puri or Dahi Papdi Chaat

Dahi Puri or Dahi Batata Puri is another chaat item we all like. Spicy, tangy chutneys with yogurt and crisp puris tastes yumm!

Ingredients:
Maida/All purpose flour - 5 cups
Rava/Suji/Semolina - 3/4 cup
Oil

Boiled Potatoes - 3 medium
Yellow Peas/Vatana - 2 cups
Turmeric/Haldi - 1/2 tsp
Asafetida/Hing - 1/4 tsp

Cilantro/Coriander leaves - 2 bunches
Mint/Pudina leaves - a bunch
Green chilies - 10

Pitted Dates/Khajur - 15
Jaggery or Brown sugar - 2 tsp
Tamarind pulp - 2 tsp

Curd/Yogurt - 2 cups
Chat Masala
Salt

How to make Indian Dahi Papdi Chaat:
  • Homemade Puris: In a mixing bowl, add all purpose flour, semolina and salt. Knead well into a firm dough using water. Use little oil to make it little soft. If time permits, keep it (covered) aside for 2 hours.
  • Make balls of this dough and roll each one very thin. Use a cookie cutter to cut out small puris. For flat puris, prick them with a fork so that they dont puff up. Deep fry these in hot oil. 
  • Boil, peel and thinly slice the potatoes.
  • Soak yellow peas overnight. Wash the soaked peas and cook them till very soft. Add turmeric, salt, asafetida and bring to a boil.
  • Teekhi Hari Chutney: Grind 2:1 cilantro and mint, green chilies, salt to a fine paste. Add very little water for a thick chutney.
  • Khatti Meethi Chutney: Grind dates, jaggery, tamarind pulp to a fine paste using little water. Soaking the dates in hot water for 20 - 30 minutes will make grinding easy.
  • Mix the green chutney and sweet sour chutney as per your taste. In a bowl, whisk/beat the curd well and add chat masala to it. Alternatively, you can sprinkle chat masala on curd while serving.
  • Arrange the puris (flat or puffed) in a plate. Crack the puris in the centre if puffed. Place potato slices (or mashed) on the puris, add cooked peas. Add chopped onions, tomatoes as well if you like. Add mixed chutney followed by curd on the puris. Top puris with sev and Dahi Puri is ready.

You can cook dal with just one kind or a mix of two or more. I generally cook dal with 1:1 Toor and Moong dals. But then, we like Panchmel or Panchratna Dal too, which is made of all five. Most dal recipes have Toor dal as the primary ingredient. It is also known as Toovar or Arhar dal or Split Pigeon Peas . Some of our family favorite dal recipes are Dalitoy (Konkani Dal)  Tadka Dal Among all lentils, moong dal and masoor dal take lesser time to cook. Moong dal is also known as Split Green Gram or Split Mung Bean . Moong dal is also used in making sweet dishes like Mung Dal Kheer  Mung Dal Puranpoli Chana dal is also known as Split Bengal Gram or Split Chickpeas . Chana Dal takes a little more time to cook as compared to toor dal....
