Gajar (Carrot) Parathas

North Indian carrot stuffed wheat bread. 

Ingredients:
Wheat Flour - 3 cups
Grated Baby Carrots - 2 cups
Green Chillies - 5
Cilantro/Coriander Leaves - few sprigs
Garlic - 4 big cloves
Coriander/Dhania Seeds - 1 tsp
Cumin/Jeera Seeds - 1/2 tsp
Garam Masala - 1/4 tsp
Butter or Oil
Salt

Method:
1. In a mixing bowl, add wheat flour, little salt.  Add water and knead into a soft dough.  Add 1 tbsp oil and knead again.  Keep the dough covered for 20 - 30 minutes.
2. Finely chop green chillies, garlic and cilantro leaves.  Grind the coriander seeds to a coarse powder.
3. Carrot Stuffing: Heat 1 tbsp oil in a pan.  Add cumin and garlic.  Saute for a minute and add grated carrots.  Saute till carrots are cooked.  Add coriander powder, garam masala, salt and chopped cilantro.  Saute for 2 more minutes.  Let the stuffing cool.

4. Make round balls of the wheat dough.  Roll each ball big enough (4 - 5 inches diameter) to hold the stuffing.  Place 1 - 2 tbsp stuffing in the centre and gather the edges to form a round ball.  Let the stuffed balls rest for a couple of minutes.  Roll the stuffed balls gently to the desired thickness dusting some flour.
5. Heat a griddle/tawa and roast the rolled Gajar Parothas both sides.  Drizzle little oil or apply some butter while roasting the parathas.

Serve Carrot Paranthas with curd or a curry.

Naval Kol Bhaji / Kohlrabi Stir-fry

Green Kohlrabi called as Navalkol in Marathi and Navilkosu in Kannada, belongs to the cabbage family.  My Mom used to make this stir fry very often.  Just like cabbage, this vegetable in available in two colors - green and purple.  I was quite hesitant about the purple one, as I haven't seen that back in India.  Anyway, I picked the green bulbs and Navalkohl Bhaji with Chana Dal was part of our healthy vegetarian meal today.

Surti Val Papdi Bhaji

My Mom used to make Val Papdi Bhaji in a simple way with few ingredients. This is the first time I gave it a try here in my US kitchen. This stir fry does require little more oil, as no water is added for cooking. Dal Rice tastes great with this sauteed Papdi.  I tried this Bhaji once with frozen Surti Papdi and I was not happy with the result. I prefer fresh Papdi for this recipe, which I can only find in the local Indian store. I am not sure if Val Papdi is called as Navy Bean or Fava Bean in English.
