Eggless Oats and Wheat Cookies

Ingredients:
Wheat Flour - 1 1/2 cups
Whole Oats - 1 1/4 cups
Brown Sugar - 1 cup
Unsalted Butter - 1/2 pound
Walnuts/Akrot - 1/2 cup
Whole Pistachios or Almonds or Cashews
Baking Soda - 1/4 tsp
Baking Powder - 1/8 tsp

Green Cardamom/Elaichi - 2 pods (seeds only)

Method:
1. Roughly chop the walnuts.  Grind green cardamom seeds to a fine powder.
2. Microwave butter in a microwave safe mixing bowl for about 2 minutes to melt the butter.  Alternately, you can heat butter in a vessel on a stove top.  Let the butter cool slightly, about lukewarm.
3. Now add chopped walnuts, green cardamom powder and brown sugar to the melted butter.  Mix well with a spoon to dissolve the sugar.
4. Lastly add baking soda, baking powder, wheat flour and oats.  Mix all the ingredients well. 
5. Divide the dough into equal size 20 - 25 round balls.  Slightly flatten them and place whole pistachios in the centre.  The dough has enough butter, so there is no need to grease the baking tray. 
6. Place the dough balls on a baking tray lined with aluminium foil, each a few inches part.  Preheat the oven at 350 deg. F and bake the cookies for 12 - 15 minutes. 
7. Enjoy crunchy crispy Eggless Oats and Whole Wheat Cookies.

Naval Kol Bhaji / Kohlrabi Stir-fry

Green Kohlrabi called as Navalkol in Marathi and Navilkosu in Kannada, belongs to the cabbage family.  My Mom used to make this stir fry very often.  Just like cabbage, this vegetable in available in two colors - green and purple.  I was quite hesitant about the purple one, as I haven't seen that back in India.  Anyway, I picked the green bulbs and Navalkohl Bhaji with Chana Dal was part of our healthy vegetarian meal today.

Ricotta Cheese Pedha / Peda

Once or twice every week, my Dad used to get some treats on his way back home. Somedays it used to Kandi Pedha or Kesar Pedha. This is my attempt of making Indian Mithai at home. I might dare say, I was pretty successful. Touch Wood! Tasted and looked great! If you are a fan of milk sweets, do try this easy home made Kesar Pedha recipe made of Ricotta Cheese and milk powder. Ingredients: Ricotta Cheese (full fat) - 15 oz (about 400 gm) Milk Powder - 3/4 cup Whole Milk - 1/2 cup Sugar - 1/4 cup + 2 tbsp Ghee/Clarified Butter - 1 tbsp Green Cardamom/Elaichi - 2 pods Saffron/Kesar - few strands Pistachios/Pista - 3 How to make Pedha using Ricotta Cheese: Crush cardamom seeds and saffron in a mortar pestle to a fine powder. Finely chop or slice the pistachios or any other nuts of your choice. Heat ghee in a heavy bottom kadhai or pan. Add ricotta cheese and stir continuously.
