Bharil Vaingan (Vegan Eggplant Coconut Curry)

We Konkanis love coconut, be it breakfast like GoDa Phovu or a curry like this one. The mild flavor of Udid Methi , as said in Konkani is the highlight of this eggplant curry. This no onion garlic recipe is a tasty delight for both vegans and vegetarians.

Ubbati / Puranpoli / Holige

Puranpoli in Marathi, Ubbatti in Konkani, Holige in Kannada is a traditional sweet made especially during the festival of colors - Holi. In other words, Puranpoli is  a sweet paratha stuffed with lentils.

Lauki Sabji (Bottle Gourd Curry)

Spicy, tangy bottle gourd curry with chickpeas.  This curry is a nutritious and tasty combo of veggies and protein rich beans.  Generally, chana dal/split gram dal/split chickpeas are cooked with lauki, I have used whole chickpeas instead.  I guess any other beans would work fine too. I had blogged a similar recipe earlier - Bottle gourd Chickpeas Stir Fry . Ingredients: Bottle Gourd/Lauki/Dudhi - 1 medium Dry Chickpeas/Garbanzo Beans/Kabuli Chana - 1/2 cup Tomatoes - 2 medium Onion - 1 medium Ginger Garlic Paste - 1 tbsp Dry Red Chillies - 5 Coriander/Cilantro Leaves - few sprigs Cumin Seeds/Jeera - 1 tsp Fennel Seeds/Saunf - 1/2 tsp Turmeric/Haldi - 1/2 tsp Garam Masala or any other spice mix - 1/2 tsp Oil - 1 tbsp Salt Method: 1. Vegetable Manchurian is an Indo Chinese recipe of deep fried veggie balls/koftas in a spicy sauce.  It is served as a side dish with fried rice and/or noodles or as an appetizer.

Eggless Oats Cookies with Dry Mangoes

Eggless crisp cookies or biscuits made of oats, whole wheat flour and chewy dry mangoes. These cookies can be made using 'tutti fruity' as well.  But I prefer dry fruits like dry mangoes, dry grapes/raisins, dry figs, dry apricots which do not have food colour or preservatives. Ingredients: Whole Wheat Flour - 1 cup Instant Oats - 1/2 cup Light Brown Sugar - 3/4 cup Unsalted Butter - 1/4 pound (about 115 gms) Walnuts or any other nuts - 1/4 cup Dry Mangoes - 1/4 cup + 1 tbsp Baking Powder - 1/4 tsp Baking Soda - 1/4 tsp Green Cardamom/Elaichi - 2 pods (seeds only) Method: 1. Heat the butter just enough to melt it.  Let it cool slightly. 2. Roughly chop walnuts and dry mangoes.  Use any other nuts or fruits of your choice - almonds, cashews, pistachios, pecans, dry apricots, dry grapes/raisins.  Crush the cardamom seeds to a fine powder in a mortar pestle. 3. Dabeli / Kacchi Dabeli

Kachi Dabeli is a Gujarati snack, now a popular street food in most Indian cities.  Dabeli is a potato sandwich with a fruity sweetness, a tangy tamarind flavour and a crunchy masala peanut taste.  A onion free, garlic free Dabeli recipe. In an authentic recipe, pomegranate/anar/dalimb seeds are used, but sweet grapes work perfectly fine as a substitute.

Palak Paneer Paratha

Palak Paneer is an Indian entree which needs no introduction.  Today's recipe has the same ingredients - Spinach/Palak and Paneer/Indian Cottage Cheese, but in the form of a stuffed Paratha. Ingredients: Chopped Spinach/Palak - 1 1/2 cups Wheat Flour - about 1 1/4 cups Carom Seeds/Ajwain - 1/2 tsp Turmeric/Haldi - 1/8 tsp Jaggery or Sugar - 1/4 tsp Cayenne Pepper/Red Chilli Powder - 1/4 tsp Paneer/Indian Cottage Cheese - about 1 cup Fennel Seeds/Saunf - 1/2 tsp Anardana/Pomegranate Powder - 1/2 tsp Green Chilli Paste - 1/2 tsp Chat Masala - 1/4 tsp Coriander/Cilantro Leaves - few sprigs Butter or Ghee/Clarified Butter or Oil Salt Method: 1.
