Veggie Black Bean Tacos

Whenever I don't have much time, I go for some semi homemade meals. Sandwiches or Tacos with any vegetables I have. Today's meal is with Vegetable and Black Bean Tacos with store bought Tortillas. Mexican Tacos are quite similar to Indian Vegetable Frankie or Kathi RollGrilled veggies, cheese and lettuce make these wraps delicious and healthy.

Ingredients:
Tortillas - 6
Dry Black Beans - 1 cup
Zucchini Squash - about 2 cups
Tomato - 1 medium
Lettuce - about 1 cup
Mozzarella and Cheddar Cheese - 1/2 cup each
Chipotle Seasoning - 2 tsp
Garlic - 2 big cloves
Cumin/Jeera Powder - 1/2 tsp
Coriander/Dhaniya Powder - 1/2 tsp
Black Pepper Powder - 1/2 tsp
Oil - 1 tbsp
Salt
Black Beans

How to make Veggie Tacos:
  • Cook black beans with 2 cups water until they turn soft. Add more water if required. I used a pressure cooker for cooking beans.  Add 1 1/2 tsp Chipotle Seasoning, cumin, coriander and salt. Continue cooking the beans until all the water is lost.
  • Meanwhile, medium chop zucchini squash and finely chop garlic. Heat oil in a pan and add zucchini, garlic. Sauté for a minute or two and add 1/2 tsp Chipotle Seasoning, freshly ground black pepper, salt. Sauté until zucchini is cooked. You can use any other veggies of your choice like bell peppers/capsicum.
  • Discard the seeds and the soft part of the tomato. Finely chop tomato and lettuce. Grate the cheese. Use any cheese of your choice.
  • Heat the tortillas as per instructions. I used a cast iron griddle/tawa and heated each side for about 10 seconds. While heating, fold them on the griddle.

On each tortilla, add black beans followed by zucchini and top it with tomatoes, lettuce and cheese. Enjoy homemade Veggie Tacos with guacamole.

For me, dal is comfort food. 5 different dal varieties - Toor, Moong, Chana, Masoor and Urad are commonly used in Indian sweet and savory delicacies. You can cook dal with just one kind or a mix of two or more. I generally cook dal with 1:1 Toor and Moong dals. But then, we like Panchmel or Panchratna Dal too, which is made of all five. Most dal recipes have Toor dal as the primary ingredient. It is also known as Toovar or Arhar dal or Split Pigeon Peas . Some of our family favorite dal recipes are Dalitoy (Konkani Dal)  Tadka Dal Among all lentils, moong dal and masoor dal take lesser time to cook. Moong dal is also known as Split Green Gram or Split Mung Bean . Moong dal is also used in making sweet dishes like Mung Dal Kheer  Mung Dal Puranpoli Chana dal is also known as Split Bengal Gram or Split Chickpeas . Chana Dal takes a little more time to cook as compared to toor dal....
