Crunchy Fritters Coleslaw Sandwich

Veggie Fritters Coleslaw Sandwich
Today's sandwich is a fusion recipe of Indian Fritters and the American Coleslaw. These onion fritters are well known as Kanda Bhajji or Onion Pakoda. If you are looking for a veggie sandwich, these crunchy fritters with a creamy Apple slaw is perfect.

Ingredients:
Red Onion - 1 big
Spring/Green Onions - 6
Green Chilies - 4
Coriander/Cilantro Leaves - few sprigs
Chickpea Flour/Gram Flour/Besan - about 1/2 cup
Rice Flour - 1/4 cup
Coriander/Dhania Powder - 1 tsp
Turmeric/Haldi - 1/4 tsp
Salt
Oil for frying
Granny Smith Apple - 1
Cabbage (thinly sliced) - about 1 cup
Serrano Pepper - 1
Celery Salt - 1/2 tsp
Yogurt/Curds/Dahi - about 1/2 cup
Bread or Tortillas

How to prepare Crunchy Fritters Sandwich with Apple Coleslaw:
Preparing Apple Yogurt Coleslaw: 
  • Discard the seeds of the Serrano pepper and finely chop it. Dice the apple and cabbage into thin long strands. In a mixing bowl, add apple, cabbage, celery salt and Serrano pepper. Mix all the ingredients and refrigerate the slaw.  
  • If Serrano pepper is not available, you can use Jalapeno Peppers or any other chili. I used Green Granny Smith Apple for its tartness. You can use any other apple of your choice. To make the slaw more colorful, you can use red or purple cabbage as well.
  • Though I have used yogurt for this slaw, generally Mayonnaise is the dressing for coleslaw. You can try even Chipotle Mayonnaise and/or sour cream.

Preparing Kanda Bhajji or Onion Fritters:
  • Julienne slice the red (or white or yellow) onion and finely chop green onions. Finely chop green chilies and cilantro leaves. In a mixing bowl, add red onions, green onions, cilantro leaves, green chilies, coriander powder, turmeric and salt. Mix and set it aside for about 30 minutes so that the onions turn watery.
  • Along with onions, you can use other veggies like green beans, carrots, bell peppers and so on. 
  • When onions turn slightly soft and watery, add rice flour. Now add chickpea flour, little at a time to absorb the water and bind all the ingredients well.
  • Heat oil for deep frying in a pan. Make round balls of the onion batter and deep fry them in batches in medium hot oil, until nice golden brown and crunchy. Place the onion fritters on a paper towel.
Kanda Bhajji Pakora
Cut the bread loaf or baguette. Place the fritters followed with coleslaw and enjoy Crunchy Veggie Fritters Sandwich. Instead of bread, you can also use store bought whole wheat tortillas which are 100 calories each.
