Microwave Potato Chips

Microwave Potato Chips
An all time favorite snack - Potato Chips, but cooked in a microwave.  Less oily and not deep fried.

Ingredients:
Potato (Russet) - 1 big
Salt
Oil

How to cook Crisp Potato Chips in a Microwave:
  • In a big bowl, add about 1/2 tsp salt and mix well. Wash the potato well. No need to peel the skin. Thinly slice the potato using a knife or a mandolin slicer.  Add the slices to the salty water.  Set it aside for 15 - 20 minutes.
  • Drain the water and rinse the slices in water 2 - 3 times, so that the water turns clear. Place the slices on a clean kitchen towel and pat them dry.
Potato Chips
  • Grease a microwave safe plate with cooking spray or oil. Arrange the slices on the plate. Grease the slices with cooking spray or brush each slice with oil. Sprinkle little salt and microwave for 2 minutes. Along with salt, you can sprinkle any other seasoning of your choice.
  • Flip the slices and microwave for another 2 minutes or until potato slices turn slightly brown and crisp. Some slices might turn crisp quicker than the rest.  After cooling completely, the chips will turn more crisp. Repeat this process for the remaining slices.
  • Let the chips cool completely and store them in an airtight container. Enjoy healthy Potato Chips with sandwiches or as an anytime snack.

Naval Kol Bhaji / Kohlrabi Stir-fry

Green Kohlrabi called as Navalkol in Marathi and Navilkosu in Kannada, belongs to the cabbage family.  My Mom used to make this stir fry very often.  Just like cabbage, this vegetable in available in two colors - green and purple.  I was quite hesitant about the purple one, as I haven't seen that back in India.  Anyway, I picked the green bulbs and Navalkohl Bhaji with Chana Dal was part of our healthy vegetarian meal today.

Surti Val Papdi Bhaji

My Mom used to make Val Papdi Bhaji in a simple way with few ingredients. This is the first time I gave it a try here in my US kitchen. This stir fry does require little more oil, as no water is added for cooking. Dal Rice tastes great with this sauteed Papdi.  I tried this Bhaji once with frozen Surti Papdi and I was not happy with the result. I prefer fresh Papdi for this recipe, which I can only find in the local Indian store. I am not sure if Val Papdi is called as Navy Bean or Fava Bean in English.
