Oven Roasted Potatoes

Roasted Potatoes
Oven roasted red potatoes seasoned with Indian spices and herbs. Every time I cook potatoes, I try different seasonings. Until now, rosemary and garlic were our favorite spices. These desi style chatpate Aloo have become our new favorite.

Ingredients:
Red Potatoes - about 500 gms
Oil - 2 tbsp
Black Pepper Powder - 1/2 tsp
Cayenne Pepper/Red Chili Powder - 1/2 tsp
Chat Masala - 1/2 tsp
Ground Cumin/Jeera Powder - 1/2 tsp
Kasuri Methi/Dry Fenugreek Leaves - 1 tsp
Garlic Powder - 1 tsp
Kala Namak/Indian Rock Salt

How to roast potatoes in an oven:
  • Preheat the oven at 400 degrees F. Line a baking tray with aluminum foil.
  • In a big mixing bowl, add oil, fresh ground black pepper, cayenne pepper, chat masala, cumin, garlic, salt and kasuri methi. Crush the kasuri methi leaves between your palms before adding to the bowl. If Kala Namak is not available, use regular salt. Mix all the ingredients well. You can add more oil if you like.
  • Wash/scrub the potatoes well. Pat them dry. Dice each potato lengthwise into 4 parts. Cut each quarter into 2.
  • Add the diced potatoes to the bowl and toss them well.
  • Spread the potatoes evenly on the tray. Bake for about 30 minutes. Using a fork check if the potatoes are cooked.
Serve Asian style Roasted potatoes as a side dish.

Naval Kol Bhaji / Kohlrabi Stir-fry

Green Kohlrabi called as Navalkol in Marathi and Navilkosu in Kannada, belongs to the cabbage family.  My Mom used to make this stir fry very often.  Just like cabbage, this vegetable in available in two colors - green and purple.  I was quite hesitant about the purple one, as I haven't seen that back in India.  Anyway, I picked the green bulbs and Navalkohl Bhaji with Chana Dal was part of our healthy vegetarian meal today.

Surti Val Papdi Bhaji

My Mom used to make Val Papdi Bhaji in a simple way with few ingredients. This is the first time I gave it a try here in my US kitchen. This stir fry does require little more oil, as no water is added for cooking. Dal Rice tastes great with this sauteed Papdi.  I tried this Bhaji once with frozen Surti Papdi and I was not happy with the result. I prefer fresh Papdi for this recipe, which I can only find in the local Indian store. I am not sure if Val Papdi is called as Navy Bean or Fava Bean in English.
