Instant God Appe / Sweet Paddu / Paniyaram

God Appe
Since I brought a mini pancake pan, Appe has joined our list of breakfast menu. So far, I have posted savory recipes. You guys might have read about
Udid Methi Appe and also an instant version of Gluten free AppeToday I made God Appe for breakfast. Sweet appe or paddu or paniyaram are made either with rice or wheat. Wheat flour is the instant one as compared to the rice paddu. Hope you all like these sweet pancakes with bananas.

Ingredients:
Whole Wheat Flour - 1 cup
Flattened Rice/Thin Poha - 1/2 cup
Grated Jaggery/Gud/Gul - 1/2 cup
Shredded Coconut (fresh or frozen) - 1/4 cup
Ripe Bananas - 2 big
Green Cardamom/Elaichi - 2 pods
Oil or Ghee/Clarified Butter

How to make Instant God Appo:
  • Blend flattened rice, grated jaggery, coconut and bananas to a slightly coarse paste in a food processor or a blender.
  • If jaggery is not available, brown sugar is a good substitute. Based on the sweetness you like, add more or less jaggery.
  • Crush cardamom seeds to a fine powder in a mortar pestle.
  • In a mixing bowl, add the ground paste, cardamom powder and whole wheat flour. Add water little at a time, to make a thick batter of pouring consistency. You can add a pinch of baking soda to the batter as well.
  • Heat the Danish pan / Appe pan, the one with wells. Grease the wells with oil or ghee. Ghee tastes better for these sweet globes.
  • Add about 1 tbsp batter in each well. Do not overfill the wells. Cook for 2 - 3 minutes or until pancakes/appe start to pull away from the sides of the well and have browned at the bottom. Using wooden skewers or a fork, gently flip each pancake/appo and finish cooking on the other side.
  • Below is the picture of a cast iron Danish Aebleskiver pan which is perfect for making South Indian Appe.  If you are not a fan of sweet appe, take a look at savory Appe / Paniyaram / Paddu made of idli batter.
  • Grease the wells for each round and repeat the process for the batter.
Enjoy God Appe for breakfast or a light snack. Top them with more ghee if you like.

Naval Kol Bhaji / Kohlrabi Stir-fry

Green Kohlrabi called as Navalkol in Marathi and Navilkosu in Kannada, belongs to the cabbage family.  My Mom used to make this stir fry very often.  Just like cabbage, this vegetable in available in two colors - green and purple.  I was quite hesitant about the purple one, as I haven't seen that back in India.  Anyway, I picked the green bulbs and Navalkohl Bhaji with Chana Dal was part of our healthy vegetarian meal today.

Indian Dal / Lentils

Lentils, known as Dal are a staple in an Indian diet, especially vegetarian. For me, dal is comfort food. 5 different dal varieties - Toor, Moong, Chana, Masoor and Urad are commonly used in Indian sweet and savory delicacies. You can cook dal with just one kind or a mix of two or more. I generally cook dal with 1:1 Toor and Moong dals. But then, we like Panchmel or Panchratna Dal too, which is made of all five. Most dal recipes have Toor dal as the primary ingredient. It is also known as Toovar or Arhar dal or Split Pigeon Peas . Some of our family favorite dal recipes are Dalitoy (Konkani Dal)  Tadka Dal Among all lentils, moong dal and masoor dal take lesser time to cook. Moong dal is also known as Split Green Gram or Split Mung Bean . Moong dal is also used in making sweet dishes like Mung Dal Kheer  Mung Dal Puranpoli Chana dal is also known as Split Bengal Gram or Split Chickpeas . Chana Dal takes a little more time to cook as compared to toor dal....
