Gluten Free Besan Gulache Ladoo

Besan Good Ladoo

Hey everyone! Long time no see! Hope all is well in your world. I am back with a healthier Indian Mithai recipe. It is gluten free and protein rich. Vegans can use Coconut Oil instead of Clarified Butter. I made this for my picky 11 year old. My kiddo eats pretty healthy, but feeding vegan protein rich beans and lentils is a work in progress. Today's sweet treat is made with Chickpea Flour and Jaggery. Jaggery also called as Good in Hindi and Gool in Marathi is a less processed form of sugar. It is darker in color like molasses. Hope you enjoy making this delicacy for your loved ones.

Ingredients:

Ladu Besan/ Chickpea Flour - 2 cups

Ghee/Clarified Butter - 3 - 4 tbsp

Jaggery Powder - 1/4 cup + 1 tbsp

Saffron/Kesar strands - a pinch

Cinnamon/Dalchini Powder - 1/4 tsp

Nuts for garnish if you like

Besan Gulache Ladoo
How to make Homemade Besan Gud ke Ladoo:

  • In a heavy bottom pan, add ghee and besan. Roast it at low or medium flame until you get a roasted aroma. Ladu Besan is a coarse form of chickpea flour available at Indian stores. I got mine at India Bazaar.
  • For me, roasting took about 25 minutes. Make sure besan is neither raw nor burnt.
  • While the pan is still hot, add jaggery powder, crushed saffron and cinnamon. Usually, green cardamom or elaichi powder is added to Indian desserts. But, my kid likes cinnamon better. Feel free to use what you like.
  • Saute at low flame for a couple minutes, until jaggery melts and all ingredients are mixed well.
  • Taste and check if besan is roasted well and doesn't taste raw. Also, check if you need more sweetener. When the ladoo mix is cool enough to handle, see if you can make balls. If not, add a little more ghee.
  • I started with 1/4 cup jaggery and later added 1 tbsp more jaggery. We like our sweets less sweet. Feel free to add more or less to suit your taste. Also, sugar can be used for these laddos.
  • While making round balls, feel free to top with ghee roasted dry fruits or nuts if you like. Raisins, cranberries, almonds, cashews, pistachios are all good toppings. Enjoy and do let me know how it turned out for you.

Naval Kol Bhaji / Kohlrabi Stir-fry

Green Kohlrabi called as Navalkol in Marathi and Navilkosu in Kannada, belongs to the cabbage family.  My Mom used to make this stir fry very often.  Just like cabbage, this vegetable in available in two colors - green and purple.  I was quite hesitant about the purple one, as I haven't seen that back in India.  Anyway, I picked the green bulbs and Navalkohl Bhaji with Chana Dal was part of our healthy vegetarian meal today.

Indian Dal / Lentils

Lentils, known as Dal are a staple in an Indian diet, especially vegetarian. For me, dal is comfort food. 5 different dal varieties - Toor, Moong, Chana, Masoor and Urad are commonly used in Indian sweet and savory delicacies. You can cook dal with just one kind or a mix of two or more. I generally cook dal with 1:1 Toor and Moong dals. But then, we like Panchmel or Panchratna Dal too, which is made of all five. Most dal recipes have Toor dal as the primary ingredient. It is also known as Toovar or Arhar dal or Split Pigeon Peas . Some of our family favorite dal recipes are Dalitoy (Konkani Dal)  Tadka Dal Among all lentils, moong dal and masoor dal take lesser time to cook. Moong dal is also known as Split Green Gram or Split Mung Bean . Moong dal is also used in making sweet dishes like Mung Dal Kheer  Mung Dal Puranpoli Chana dal is also known as Split Bengal Gram or Split Chickpeas . Chana Dal takes a little more time to cook as compared to toor dal....
