Eggless Oats and Wheat Cookies

Ingredients: Wheat Flour - 1 1/2 cups Whole Oats - 1 1/4 cups Brown Sugar - 1 cup Unsalted Butter - 1/2 pound Walnuts/Akrot - 1/2 cup Whole Pistachios or Almonds or Cashews Baking Soda - 1/4 tsp Baking Powder - 1/8 tsp Green Cardamom/Elaichi - 2 pods (seeds only) Method: 1. Roughly chop the walnuts.  Grind green cardamom seeds to a fine powder. 2. Microwave butter in a microwave safe mixing bowl for about 2 minutes to melt the butter.  Alternately, you can heat butter in a vessel on a stove top.  Let the butter cool slightly, about lukewarm. 3. Now add chopped walnuts, green cardamom powder and brown sugar to the melted butter.  Mix well with a spoon to dissolve the sugar. 4. Lastly add baking soda, baking powder, wheat flour and oats.  Mix all the ingredients well.  5. Chilli Chicken

An Indo Chinese recipe of Chicken. Ingredients: Chicken - 350 gms Capsicum/Bell Peppers - 1/2 cup Spring/Green Onions - 1/2 cup Onion - 1 medium Tomato - 1 big Garlic - 5 big cloves Ginger - 1/2 inch piece Red Chilli Powder/Cayenne Pepper - 1 1/2 tbsp Black Pepper Powder - 1/4 tsp Soy Sauce - 1 tbsp Vinegar - 1/2 tbsp Salt Oil Method: 1. Grind roughly diced tomato, ginger, garlic, red chilli powder, black pepper powder, soy sauce, vinegar, salt to a fine puree.  Marinate washed chicken pieces in this marinade for 2 - 3 hours.  Keep it covered and preferably refrigerated. 2. Finely chop onions and spring onions.  Dice green capsicum or coloured bell peppers into cubes. 3. Heat 1 - 2 tbsp oil in a pan and add finely chopped onions.  Saute till onions turn soft.  Add the marinated chicken pieces and saute for 2 - 3 minutes. 4. Murg Methi or Methi Chicken

Spicy chicken with fresh Fenugreek/Methi greens. Ingredients: Chicken - 750 gms Fenugreek/Methi Leaves - 3 cups Onion - 2 medium Tomatoes - 2 medium Cumin/Jeera Seeds - 1/2 tsp Green Cardamom/Elaichi - 2 pods Cloves/Lavang/Long - 5 Cinnamon/Dalchini - 1/2 inch piece Black Peppercorns/Kali Miri - 8 Poppy Seeds/Khuskhus - 1/2 tsp Oil Coriander/Cilantro Leaves - 1/2 cup Yogurt/Curd - 1/2 cup Green Chillies - 5 Ginger - an inch piece Garlic - 8 big cloves Salt Method: 1. Grind cilantro leaves, green chillies, ginger, garlic, salt and yogurt to a fine paste.  Add washed chicken pieces to the yogurt marinade and mix well.  (You can use lemon juice instead of yogurt as well.)  Cover and keep it refrigerated for about 2 hours or preferably overnight. 2. Palak Pakode (Spinach Fritters)

Spinach Leaves fried in a chickpea flour/besan batter.  Not an ideal way of eating greens, but I dont mind fried stuff once in a while. Ingredients: Spinach Leaves Besan/Chickpea Flour/Gram Flour - 1/2 cup Cayenne Pepper/Red Chilli Powder - 1/2 tsp Black Pepper Powder - 1/4 tsp Turmeric/Haldi - 1/4 tsp Salt Oil Method: In a mixing bowl, add chickpea flour, cayenne pepper, black pepper powder, turmeric and about 1/2 tsp salt.  Adding (about 1/2 cup) water in small amounts, mix to form a slightly thick batter.  Heat enough oil for deep frying.  Dip the (washed and wiped) spinach leaves in the chickpea batter.  Deep fry them till they turn crisp.

Koshimbir - Veggie Salad

Maharashtrian salad with cucumbers, tomatoes and curd.  An easy, quick and tasty side dish. Ingredients: Cucumber/Kaakdi Slices - 1 cup Tomato Slices - 1/2 cup Red Onion Slices - 1/4 cup Curd/Yogurt/Dahi - 1/2 cup Cilantro/Coriander Leaves - few sprigs Mint/Pudina Leaves - 5 (optional) Black Pepper/Kali Miri Powder - 1/8 tsp Salt - 1/4 tsp Method: Finely chop cilantro and pudina leaves.  Cut the cucumber, tomato and onion into thin slices.  I used a slicer.  In a mixing bowl, add curd, salt, black pepper powder and mix well.  Now add veggie slices, chopped cilantro, mint and mix well.  You can also add peanut (groundnut) powder and/or dalia (roasted split chickpea) powder as well.  Instead of black pepper you can add finely chopped/minced green chillies as well.

Chicken Kadhai

A popular Indian Chicken curry also known as Kadahi Chicken or Chicken Karahi. Ingredients: Chicken - about 300 gms Green Bell Peppers/Capsicum - 1 cup Red Onion - 1 big Chopped Garlic - 2 tbsp Chopped Ginger - 1 tsp Oil Coriander/Dhania Seeds - 1 1/2 tbsp Cumin/Jeera Seeds - 1 tsp Fennel/Saunf Seeds - 1 tsp Cinnamon/Dalchini - an inch piece Cloves/Long/Lavang - 3 Green Cardamom/Elaichi - 1 pod  Bay Leaf - 1 Red Chilli Powder - 2 tbsp Black Pepper Powder - 1/4 tsp Turmeric/Haldi - 1/2 tsp Lemon Juice - 4 tbsp Salt Method: 1. In a mixing bowl, add lemon juice, red chilli powder, turmeric, black pepper powder, 1/2 tsp salt and mix with a spoon.  Add more lemon juice if required.  Add the washed chicken pieces and mix to coat them well.  Keep it covered (and preferably refrigerated) for 2 - 3 hours. 2.
