Lettuce Cucumber Salad with Orange Vinaigrette

Lettuce and Cucumbers with a fruity orange and apple cider dressing.

Ingredients:
Iceberg Lettuce - about 200 gms
Romaine Lettuce - about 200 gms
Cucumber - 1 medium
Carrot - 1 medium
Red Cabbage - about 1/2 cup
Red Onion - about 2 tbsp
Garlic - 1 big clove
Orange Juice - 2 tbsp
Apple Cider Vinegar - 1 1/2 tbsp
Olive Oil - 1 tbsp
Black Pepper Powder - 1/2 tsp
Red Chilli Flakes/Powder - 1/4 tsp
Salt

Method:
1. Roughly chop iceberg and romaine lettuce.  Wash and let them drain in a strainer or salad spinner.  Finely chop red onions.  Dice carrot, cabbage into julienne thin slices and cucumber into round thin slices.  Finely chop/mince the peeled garlic clove.
2. Heat 1 tbsp olive oil in a small pan.  Add garlic and saute for a few minutes, so that the raw smell of garlic goes off.  Turn off the heat and let it cool.
3. In a mixing bowl, add the garlic and the oil too.  Now add apple cider vinegar, orange juice, black pepper powder, red chilli powder, salt and finely chopped onions.  Mix well with a whisk or fork.  Let this vinaigrette rest for 10 - 15 minutes, so that the onions slightly soften.
4. Just before serving, toss all veggies - lettuce, carrot, cucumber, red cabbage.
5. Enjoy Lettuce Cucumber Salad with or without cheese.

Note:  Though a vinaigrette must have 3 parts of olive oil and 1 part of vinegar, I dont follow this rule.

    1) can we use regular cabbage (as we don't get
    red here)
    2) Can we use apple pieces (small&thin)
    3) why olive oil?

  8. yes, regular green cabbage will taste same and cabbage is not a must.
    I havent tried with apple, am guessing salad will turn sweet.
    Olive oil is with lesser calories as compared to any other oil, and considered best for salads.

Naval Kol Bhaji / Kohlrabi Stir-fry

Green Kohlrabi called as Navalkol in Marathi and Navilkosu in Kannada, belongs to the cabbage family.  My Mom used to make this stir fry very often.  Just like cabbage, this vegetable in available in two colors - green and purple.  I was quite hesitant about the purple one, as I haven't seen that back in India.  Anyway, I picked the green bulbs and Navalkohl Bhaji with Chana Dal was part of our healthy vegetarian meal today.

Surti Val Papdi Bhaji

My Mom used to make Val Papdi Bhaji in a simple way with few ingredients. This is the first time I gave it a try here in my US kitchen. This stir fry does require little more oil, as no water is added for cooking. Dal Rice tastes great with this sauteed Papdi.  I tried this Bhaji once with frozen Surti Papdi and I was not happy with the result. I prefer fresh Papdi for this recipe, which I can only find in the local Indian store. I am not sure if Val Papdi is called as Navy Bean or Fava Bean in English.
