Dry Lahsun (Garlic) Chutney

Vada Pav Chutney
Chutneys are the most popular Indian condiments. Coconut Chutney is a well known accompaniment with Idlis and Dosas. This dry Lasani chutney is most loved with Vada Pav - Indian vegan burger. We relish this chutney more often with parathas and dosas too.

Ingredients:
Desiccated (Dry) Coconut - 1 cup
White Sesame/Til Seeds - 1 tbsp
Raw Peanuts/Groundnuts/Shenga - 1 tbsp
Tamarind/Imli/Chinch - about 1 tsp
Dry Red Chilies - 6
Garlic/Lahsun/Lasun - 5 big cloves
Salt - about 1/2 tsp
Dry Lahsun Chutney
How to prepare Lasun or Garlic Chutney:
  • Dry roast red chilies, sesame seeds, peanuts and coconut, each one separately. Roast at low flame until you get a toasted aroma and color changes slightly. Let all the roasted ingredients cool.
  • Wipe the blender/mixer jar dry. Blend/Grind all the roasted ingredients, salt, tamarind, peeled garlic and salt to a fine powder.
  • Keep it refrigerated, since raw garlic is used for this chutney.
Dry Garlic Chutney
Enjoy this Dry Lasani Chutney with the famous Vada Pav or North Indian Parathe or Idli Dosa. You can relish this chutney with curds/yogurt as well. Some like it with a dollop of ghee/clarified butter.

Naval Kol Bhaji / Kohlrabi Stir-fry

Green Kohlrabi called as Navalkol in Marathi and Navilkosu in Kannada, belongs to the cabbage family.  My Mom used to make this stir fry very often.  Just like cabbage, this vegetable in available in two colors - green and purple.  I was quite hesitant about the purple one, as I haven't seen that back in India.  Anyway, I picked the green bulbs and Navalkohl Bhaji with Chana Dal was part of our healthy vegetarian meal today.

Surti Val Papdi Bhaji

My Mom used to make Val Papdi Bhaji in a simple way with few ingredients. This is the first time I gave it a try here in my US kitchen. This stir fry does require little more oil, as no water is added for cooking. Dal Rice tastes great with this sauteed Papdi.  I tried this Bhaji once with frozen Surti Papdi and I was not happy with the result. I prefer fresh Papdi for this recipe, which I can only find in the local Indian store. I am not sure if Val Papdi is called as Navy Bean or Fava Bean in English.
