Coconut / Khobre / Nariyal Chutney

Coconut Chutney
Chutney, an Indian condiment is well known all over. And the South Indian Coconut Chutney needs no introduction. As I have mentioned earlier, we love Idlis and Dosas for breakfast. Just like the variety of idlis and dosas, my Mom used to make a variety of coconut chutneys. If you are looking for something new and different, try these Konkani variations of chutneys and make your everyday breakfast more tasty.

Ingredients:
Shredded or Grated Coconut (fresh or frozen) - 1 cup
Phutane/Split Dalia/Roasted Chickpeas - 1 tbsp (optional)
Tamarind/Chincham/Chinch/Imli Paste - 1/2 tsp
Green Chillies/Tarani Mirsang - 4
Asafoetida/Hing - 1/4 tsp
Curry Leaves/Kadipata/Karbeo - a sprig
Mustard Seeds/Sasam - 1/2 tsp
Dry Red Chillies - 2
Oil preferably Coconut oil
Salt

How to prepare South Indian Coconut Chutney:
  • Wash curry leaves and green chilies. Pat them dry. Make slits in the green chillies with a knife. Roast the green chillies with few drops of oil, until the skin gets slightly glazed.
  • Grind grated coconut, split dalia, roasted green chillies, tamarind and salt to a fine or slightly coarse paste. Add water little at a time, for grinding the chutney.
  • For tempering/tadka/phaNa, heat about 1 tsp oil. Add mustard seeds, dry red chillies, curry leaves and asafetida. Turn off the heat when mustard seeds pop. Add ground coconut paste to it and your Coconut Chutney is ready.
  • If you don't like this tempering, substitute the tempering with ginger and add it while grinding coconut.
Serve Khobre Chutney with Idlis, Dosas or as a side dish with meals. These chutneys taste great with parathas and roti too.

Naval Kol Bhaji / Kohlrabi Stir-fry

Green Kohlrabi called as Navalkol in Marathi and Navilkosu in Kannada, belongs to the cabbage family.  My Mom used to make this stir fry very often.  Just like cabbage, this vegetable in available in two colors - green and purple.  I was quite hesitant about the purple one, as I haven't seen that back in India.  Anyway, I picked the green bulbs and Navalkohl Bhaji with Chana Dal was part of our healthy vegetarian meal today.

Indian Dal / Lentils

Lentils, known as Dal are a staple in an Indian diet, especially vegetarian. For me, dal is comfort food. 5 different dal varieties - Toor, Moong, Chana, Masoor and Urad are commonly used in Indian sweet and savory delicacies. You can cook dal with just one kind or a mix of two or more. I generally cook dal with 1:1 Toor and Moong dals. But then, we like Panchmel or Panchratna Dal too, which is made of all five. Most dal recipes have Toor dal as the primary ingredient. It is also known as Toovar or Arhar dal or Split Pigeon Peas . Some of our family favorite dal recipes are Dalitoy (Konkani Dal)  Tadka Dal Among all lentils, moong dal and masoor dal take lesser time to cook. Moong dal is also known as Split Green Gram or Split Mung Bean . Moong dal is also used in making sweet dishes like Mung Dal Kheer  Mung Dal Puranpoli Chana dal is also known as Split Bengal Gram or Split Chickpeas . Chana Dal takes a little more time to cook as compared to toor dal....
